For my first legal day in a long time.....I wanted to have a hearty meal for breakfast to keep me focused. I couldnt decide if I wanted the eggs and popcorn that gregg talked about or the eggs and refried beans that roger recommends so I decided to combine them all into one skillet.
I layered the cooked beans and popcorn in a large bowl and covered it with two extra large eggs cooked over medium in soy margerine. I cut it up in small bites.....(Greggs right the popcorn sort of deflates) and added lots of ground pepper and a little salt. When I go to the restaurant I used to get a skillet with potatoes, onions, bacon, cheese, and two fried eggs on top and toast on the side. This was a pleasing LDL substitute. Thank you God for helping me make a good choice for my breakfast on this first day of the rest of my life.
