Breakfast Omelet

I tried a little culinary creativity this morning for my DH and he was very pleased.

Breakfast Omelet

Mix the following in a bowl:
2 eggs
1/2 cup Garden Vegetable Egg Beaters
1/2 cup corn (I used canned and drained it)
1tsp. lite Mayonnaise
Saute the following in a saute pan for just a few minutes:
1/2 cup chopped onion
1/2 tsp chopped garlic
1 small tomato (chopped)
Pour the egg mixture over the sauted veggies
Sprinkle a hand ful of fat free shredded cheese on top
Chop some fresh basil and sprinkle over top of the omelet
Cover and simmer for about 5 minutes on low to medium heat
Serve ( I put a small dollap of Joe's Pesto on top when I served it)

My husband asked when will we be having this again!
If you see anything in this recipe that I should not have used, please let me know...I am a new LDL'er!!

just double check the ingredient panel on the "garden veggie egg beater". I know some of them have added starch or sugars when you wouldn't expect it. IF that's the case just get some regular egg beaters and add all the veggies you want!
