Twist on Refried Beans with Eggs
This morning I didnt want to bother popping popcorn so I did the following
1/2 can spicy refried beans topped with
1/2 can corn
microwaved it for a minute and a half
topped it with two over medium eggs fried in EVOO
very light sprinkle of ff cheddar cheese
OMG WAS IT GOOD
I was stuffed and the best part was it only took like 2 minutes to make.

YUM!!!!!!!!!!! Sounds wonderful, Debbie! I was going to have re-fried beans with eggs last night & couldn't locate the beans in my pantry... so I just grabbed a can of pintos, rinsed and draine them, heated them for 1 minute in the microwave. Then I threw in some (no sugar) picante and had that! :-)

I just found this and it sounds great!
What kind of refried beans are the best to buy? I haven't bought any yet and I wanted to make sure I got the right ones.

I had some baked chicken leftover yesterday so I heated up some refried beans, chunked up the chicken pieces and put salsa on top...it was so yummy! My husband came in and said what do you have there and he made some also.

I love the beans and fried eggs! I throw homemade salsa on it and about 2 tsp of FF sour cream. YUMMMMY! diane

If I remember aren't we suppose to use Vegetarian Refried Beans??? There are several kinds now so it would be good to know..

Just about any combination of beans (smashed/refried), cheese, green chili, salsa, and fried eggs is a winner with me. I especially like them as a topper on a corn thin. I like the idea of corn added too. I occasionally add meat also.
I also enjoy making omelets with these key ingredients, except for beans although I might put a southwestern flavored omelet on top of a thin layer of refried beans
