Asparagus for Breakfast or Lunch or Brunch

Just watching the Food Network and they had a wonderful recipe for asparagus and scrambled eggs. Not something I would have. I will post the complete recipe - I hope it's not too long.


Asparagus with Scrambled Eggs
• 1 1/2 pounds fresh  asparagus, trimmed and cleaned
• 2 tablespoons olive oil
• 1 teaspoon sea salt, plus more for seasoning
• Freshly ground  black pepper
• 6 eggs
• 3 tablespoons milk 
• 1 tablespoon Olive Oil
Directions
Preheat your oven to 425 degrees F.
Clean and trim the asparagus by breaking off 1 asparagus end at its natural breaking point and lining up the tip end next to the remaining stalks. Trim them to the broken asparagus' length. Compost the woody ends. Lay the asparagus out on a rimmed sheet pan. Drizzle with the olive oil and season with salt and pepper.
Place them in the preheated oven and cook for 15 minutes or until tips are browned and starting to crisp.
In a small cup, crack each egg. Add each egg to a mixing bowl, stir in the milk, and season with salt and pepper.
Beat the egg mixture with a whisk, in a figure 8 pattern until the ingredients are completely blended together. In a nonstick saute pan, heat olive oil over medium-low heat. Add the eggs and cook over low heat, stirring gently with a silicone spatula. Keep the eggs moving, continuing to cook until they are cooked but soft.
Warm the serving platter or serving plates in a preheated low temperature oven, or microwave the plate for 6 to 10 seconds. Scatter roasted asparagus on the heated plate, and spoon the scrambled eggs over the asparagus. Eat immediately and enjoy!

I love asparagus and I love eggs so I'll probably try this one. Thanks much. I might not use the milk tho as I never use milk to make my scrambled eggs and I don't think it's one of the recommended foods on LDL to use very often. Thanks again  :thumbsup: Eljayne

The milk makes the egg fluffy  But I've  use water too. try one time and see if you think  their a differences. :rose:

I thought the milk being low fat was a given. The important thing in this dish is for the eggs to be soft and drape over the asparagus. This is a wonderful dish and as Chipmunk recommended - I used water.

PS I have been Mimi to all my grandchildren; however, when the great-grandchildren came along our precocious 3 year old decided I should be The Great Mimi. And so I have been to five so far.

adding just a little club soda instead of milk will make the eggs very fluffy

What about almond milk? Is that ok? I know we aren't suppose to eat nuts but what about the nut milk for recipes in place of reg milk? I found it to be much healthier & only half as many calories as milk per serving. Please let me know.
