Was hungary for some type of bread/muffin/waffle for dinner tonight....so came up with this recipe....I tried making pancakes from the batter....and they were okay...but liked the waffles better....crisper & easier to make...delicious....made the HOT BLUEBERRY PIE for pancake syrup and drizzled a little of it on top of each one with a little smart balance light margarine....yummy....sure cut my cravings....
1 bag microwave popcorn....popped & remove all hulls....make flour out of it....(pour into bowl)
ADD everything in blender or processor:
2 large eggs
1/4 c. water
1 T. cinnamon
1 large organic apple, diced....
2 t. baking powder
2 pkg stevia
Put into a bowl & stir in 3/4 c. frozen blueberries & 1/3 c. organic raisins
Pam waffle iron and pre heat....bake crispy & golden brown....
