Great dish for a brunch

Easy Egg Casserole...Serves 4

Oil
1 Onion, diced
2 cups sliced mixed mushrooms
3 Tomatoes, peeled and roughly diced
Salt, Pepper, Paprika
2 Tbs chopped Parsley
4 Eggs,
Low-Fat Cheese
Chives
another 2 Tomatoes

Preheat the oven to 420°
Heat some oil in a fryingpan.
Add the onions cook till light yellow.
Now add the Mushrooms, Tomatoes stir carefully.
Spice it with Salt, pepper and paprika.
Spray a pyrexform with cooking spray and pour the onionmixture in it.
Carefully crack the eggs on top of it, make sure the won't break.
Add a little salt on the eggwhite.
Sprinkle with the chesse.
Bake the casserole in the oven for 25 Minutes...(in the mid level)
Dice the chives real fine, quarter the tomatoes <- use it for decoration
