Eggs á la Rossini

4 big Tomatoes
8 sm Eggs
Garlic
Herbs, any kind you like
Oliveoil
FF Parmesan

Preheat oven to low Temperature.
Mix up the garlic (don't use it sparingly!) herbs and oil till it gets viscous,  set aside.
Peel The Tomatoes, cut in half, take out the seeds, that you get little Tomato bowls.
Lay the Tomatos in a bakingdish, fill in 1 Tsp.from the herbalmix into the Toms and spread it out.
Brake one Egg in every Tomato, be careful not to brake the yolk, if Egg is too big just hold some eggwhites back...
Sprinkle with a little Parmesan
Put the pan in the oven till the eggs are hardened.

Taste great with some refried beans ...

Yum, can't wait to try it. Wonder if it would work in the microwave, for speed, if a person pricked the egg yolk with a clean toothpick?

Thanks for sharing. The other egg recipe looks and sounds great, also.

ChrissyV,

Why don't you just come on over and cook (your recipes look so good)...I'm sure my husband would love the break since he's the one that does most of the cooking. Oh, by the way, he's half German and would probably understand everything you said to him for the most part. Let's put it this way, he understands more German than I do...  ;)

Also, your cat and one of ours looks just alike...male or female?
