Strawberry Banana Omelet

I needed something different for breakfast the morning so I went searching for a new recipe.  I found this in my Taste of Home Simple & Delicious cookbook and made it.  I halved the recipe for one person (me).  It was an interesting combination of flavors; but, the omelet kind of got lost in the strawberry and banana sauce.  However, I will make it again as it was very tasty and filling.  The fruit alone would make a good breakfast meal or a dessert.

3 tablespoons LDL butter (ICBINB or Smart Balance Light)
2 tablespoons Splenda
1/8 teaspoon ground cinnamon
2 medium firm bananas, sliced
1/4 teaspoon vanilla extract
1-1/2 cups sliced fresh strawberries
6 eggs
2 tablespoons water
1/2 teaspoon salt

In a small saucepan, heat 1 tablespoon butter, sugar, and cinnamon over medium heat until sugar is dissolved.  Add bananas and vanilla; toss to coat.  Remove from heat; stir in strawberries.  Set aside.

In a large bowl, beat the eggs, water and salt.  Heat 2 tablespoons butter in a 10-in. nonstick skillet over medium heat; add egg mixture.

When eggs are almost set, spread two-thirds of fruit mixture over one side; fold omelet over filling. Cover and cook for 1-2 minutes or until eggs have finished cooking.  Slide onto a serving plate; top with remaining fruit mixture.

Serves 2-3 people.

This looks good. It reminds me of a fruit filled crepe.

I have made it a couple times now and it is very much like eating a crepe.  Delicious!
