Found a hot breakfast I like...on plan

I microwaved a half of a spaghetti squash, mixed it while hot with 1/2 teaspoon of evoo based butter spread, 1 slice ff borden cheese and one fried no oil egg...touch of salt and pepper...delish! Almost like grits and eggs, which is one of my favorite things! Also had a banana and a handful of cherries...nice filling breakfast. :)

Forgot to say that because spaghetti squash has a slightly sweet taste, I'm also going to try this with chopped apples, raisins and a bit of cinnamon too! I can see a lot of combos with this base ingredient...

Almost any chain grocery store will carry spaghetti squash and winter is the time when any type of squash is a deal.

If you don't know how to cook a spaghetti squash, this hint was in one of my magazines:

Cut squash in half lengthwise and remove seeds. Place cut sides down in a shallow roasting pan or baking dish. Add 1/2 cup of water and cover with foil. Bake at 350 degrees for 1 hour.  Remove from oven, cool enough to handle, and using a fork, shred into strands.

I have successfully microwaved dozens of spaghetti squash by cutting it almost in half and then microwaving it until soft.  The last time I tried it, however, it blew up and made a huge mess in my microwave.  I sure had a nice clean microwave after fixing that problem!  Pam

I put it whole in boiling water on the stove for about 40 min.
Take it out and let if cool then slice it open and remove the seeds.
It is alot messier getting the seeds out but a whole lot easier to slice open.
As a matter of fact I cooked 2 small ones today with pizza soup over it.
I guess I am the only one who liked it, so now my freezer is full of lunch size portions.
