In the next printing of Let's Do Lunch, at the bottom of page 87 and on to page 88, put the following:

Notes: If you can't find a particular Let's Do Lunch food at your local grocery store, then you should be able to find it at a "health food store" or "online".

For those times when your body has not yet become addicted to the Let's Do Lunch foods, eat only as much of the following as is necessary to satisfy your craving for bread, pasta, potatoes or rice (these will melt in your mouth, without spreading soy margarine on them):


1 cup stone-ground corn (from Lamb's Grist Mill in Hillsboro, TX; phone: 254-528-2405; ingredients: processed from re-cleaned whole grain corn; food value retained; no preservatives added). Lamb's Grist Mill uses a proprietary grinder (only for grinding corn) and re-cleans the corn before grinding.

2 T soy margarine (Shedd's Willow Run)
1 tsp. baking powder
1/8 tsp. salt
1/2 cup non-fat milk
3 T splenda (to each individual's taste)
2 large egg-whites only
4 oz. mexicorn or regular corn (no sugar added), drained well (Green Giant)
olive oil spray

Preheat oven to 425 degrees. Mix dry ingredients together and make small pocket in mixture. Melt soy margarine. Mix melted soy margarine, milk and egg-whites together and add all at once to dry mixture, stirring just until moistened. Then add corn and stir. Spray cupcake pan with olive oil spray and add mixture evenly to the 6 openings. Bake for about 15 to 20 minutes, watching closely after 15 minutes to make sure it doesn't burn.
