question about canning

this really has nothing to do with how we eat but i know someone on here will know the answer.  we are going to can (or jar...hehe)  tomaotes again this year.  we need to put in some lemon juice, right?  and how much for the big jars?

Lizzy- I used to "put up" over 400 jars each summer in addition to filling the deep freeze.  I gave that up in favor of buying cases of food on sale at the grocery store when I increased my nursing hours to full-time.  Sorry I can't help you.  Didn't use to have to add acid, but i think it is the current recommendation because the acid in today's tomatoes is fairly low.  Good luck!  Good to see you back.  Pam

My MIL uses 2 tablespoons of lemon juice for each jar (1 quart size).

Sorry I didn't respond either but I tend to freeze my tomatoes & spagetti sauce.  When I freeze them, I freeze em whole then when running under warm water the skins slip right off.

Any questions you have on canning food can be safely answered by the company that puts out the blue book on canning and also your state agricultural dept. The food division. I use that quite a lot. I am in Minnesota. I learned about this when my girls were in 4-h club. hope this helps.  You can find these sites on the internet.

I freeze them as well.  Tomatoes used to have a lot of acid and did not need lemon juice.  In fact, before deep freezes, my mom canned corn, and to make sure it did not spoil, she put a slice of tomato on top, so the acid would help preserve.  I used to can tons of tomatoes and juice.  Mom even made her catsup. Your little girl is how old, now?  :)  JF

Obviously, everything has changed for the worse.

I can remember helping my mother in law before my husband and I were married (30 years ago) to can tomatoes and other veggies and we didn't have to add the lemon juice.

my blue book (ball canning) says 1T. lemon juice per pint jar...i canned tomatoes last year using this and they were GREAT!!  :thumbsup:

Like I said previously....2 Tbsp for a quart....that's 1 Tbsp for a pint.

My daycare  is good. No babies for a while. It seems to go that way. I like having a break from babies. They are a lot of work. The youngest I have is 2. Having older kids this summer, harder to keep them busy.
