What can I wrap Quesadillas in?

Roger- Is there a soft tortilla made from corn or something ok for us to eat? I love quesadillas. They can be made with chicken, fat free cheese, tomatoes, lettuce and any other kind of vegie. But what about the wrap part? Thanks for your help. Melissa

My Quesadillas are made with canned whole chilies, slit down the side, de-seeded, stuffed with mozerella cheese and dipped in beaten egg white; then fried. The mozerella cheese can be fat free and the pan can be sprayed with Pam to make them an ok food for the diet.
I haven't tried them yet, but will soon, because I love Mexican food. They should be good with a taco salad.
