I have been seeing these in the store lately - probably would not have even noticed them pre ldl.  But I am opening up my palate and would like to try these if they are ok. Since they are a part of the squash family I am thinking it's a go!

Here is what I found on the net among other things:
Chayote - pronounced [chah-YOH-teh]
The chayote is another native Mexican plant and is a member of the squash family.  It is also referred to as a "vegetable pear" or chcocho. In France the chayote is called a christophene. The flesh is quite crisp something like a water chestnut.

It really does look like a green pear - beautiful color!
So anyone have any tips for me?  How to cook it? What does it taste like?

...till i was reading that your are talking about a vegetable..

I was reading that you wanted to cook a coyote... :wacko:
