Meatballs

I am wondering if anyone has some recipes for uses for the LDL meatballs besides with a spagetti sauce?  I have some meatballs in the freezer I'd like to use this week and wanted to see if anyone has used the mushroom gravy recipe and baked/or in the crockpot with the meatballs in them?

Just wanted to do something different than meatballs with a red sauce.

Thanks for sharing,

Kathy

I made the mushroom gravy and thickened it with mashed butter beans.  Anyway, I ended up making the gravy pretty thick and then put my meatballs in the sauce to cook and will serve a vegetable and mashed butter beans on the side.  The gravy turned out great, giving some moisture to the meatballs and the extra for a gravy for the mashed beans.

Overall, what a great meal.  Almost like swedish meatballs.

I will often make this cabbage soup that I found on the internet but I will use Little Mary's meatball recipe instead of what it calls for.

Kathy,
I made this soup this week with my leftover LDL meatballs -- easy and tasty!

Turkey Meatball Soup

3 cups cut fresh beans (I used frozen)
2 cups fresh baby carrots
2 cups chicken broth
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon minced garlic
2 cans (14-1/2 oz size) Italian stewed tomatoes
LDL meatballs (as many as you want to add)
2 cups frozen corn

In a large saucepan or soup kettle, combine first six ingredients.  Bring to a boil.  Reduce heat; cover and simmer for 10 minutes.  Add tomatoes, meatballs, and corn.  Cover and cook over medium-low heat for 10 minutes or until the meatballs are heated through.

VickiLynn,

Are you able to find canned Italian stewed tomatoes without sugar??  If so, what brand?

Thanks for the new recipe.  Ragu Sauce with Basil has no sugar--it's new.  I am going to make Little Mary's meat balls today in gravy to put over my mashed beans.  I love mushroom flavor.   Joyful Friend

Kathy,

I took a look at other cans of stewed tomatoes I have in my pantry and I made a big boo-boo!  I didn't check the label when I bought them -- they have high fructose sugar added.  They are going back to the grocery store and the next time I make this soup I'll be replacing the them with regular diced tomatoes and all of the other ingredients that are in Italian stewed tomatoes.  Thanks for keeping me honest  *hug* .

Lizzy,

Is S&W a store brand, or national brand?  I don't think I've seen that one.

Well, that's amazing, because S&W beans almost always have added sugar -- except maybe black beans. I know we have S&W everywhere in the Northwest, so I will look for the Italian tomatoes. Yum!

Thanks Lizzy!

Kathie,

Mary's meatballs are named after her youngest son, Harrison.  Thus, they are called Harrison's Meatballs.  Here is the link: http://boards.letsdolunch.com/boards/in ... pic=8659.0

Lizzy,

Thanks for the tip on the SW tomatoes.  Unfortunately, they are not offered at either of the grocery stores anywhere near where I live; but, could be repackaged under a different brand.  I'm going to check out the organic food section.

VickiLynn,

SW is owned by Faribault Food, Inc. in Minnesota. Here is the link to find the other brands they offer. Maybe you'll recognize one of them.

CQ,

Thanks for taking the time to give me the link.  I took a look but none of the brands are offered here in Gilford, New Hampshire. --- Vicki
