You have probably never heard of "Corn Thins" before. Corn Thins make a great substitute for bread and crackers, and make a great base for LDL (Let's Do Lunch) approved snacks including mini "pizzas", egg sandwiches, pulled chicken breast (instead of pulled pork) sandwiches, and more! I LOVE them with homemade LDL-friendly hummus. You will find lots of recipes and ideas right here on the message boards.
Real Foods' Original Corn Thins are made in Australia by the Real Foods company. They are basically compressed popcorn. Unlike processed corn products where the corn is ground and then made into various food products, Corn Thins will not play havoc with your weight loss efforts. It is very interesting how they are made. Round metal molds are heated to very high temperatures. The molds are lightly spritzed by a nominal amount of oil to stop sticking, and then whole unpopped popcorn kernels are placed inside the molds. The popcorn kernals pop and fuse together because they are stuck inside the molds. When they come out, the corn thins look like thin rice cakes. Rice cakes, of course, are fattening and in most people's opinions not very tasty either! These corn thins are crispier and in most people's opinions taste a whole lot better than rice cakes.
They come in packs of 26 corn thins. You want the ones that say Real Food's ORIGINAL Corn Thins, as they do make variations with added fattening ingredients too. They are sold in some supermarkets, health food stores, Wild Oats markets, etc. If you can't buy them locally, you can buy them on-line from many sources in bulk. Usually they're sold in cases of twelve packets, so you're actually buying 12 packets (loaves) of 26 corn thins (pieces), equalling 312 individual corn thins.
