First of all, remember that something in its natural state is always a better choice than a processed food.  For example, making one of the easy soups from the recipes in the book or on the boards from scratch is going to be a much better alternative, healthwise and tastewise, than buying a can of soup.  Having said that, in this day and age, it is unrealistic to think that you're never going to buy something canned or frozen or pre-packaged.  As Let's Do Lunchers, we diligently check the labels before we buy anything to eat or drink from the supermarket.  You will be amazed at how much garbage is frequently added to seemingly healthy choices.  It's no wonder there is an obesity epidemic!

The nutritional panels are pretty interesting, but they often don't show us an accurate picture about whether or not it is a wise choice to purchase a product.  First of all, on the nutitional panels if your can of tomatoes says there are 3g of sugar, don't be alarmed.  That sugar MIGHT be natural sugars that are contained in the tomatoes, but you won't know that for sure until you take a look at the ingredients.  Also, they might say there are ZERO grams of fat in the product, but "fat" isn't the only fattening ingredient that it might contain.

Therefore, we implore you to always check the ingredients panel to get a true picture of what is in a product.  Using the can of tomatoes example again, take a look at the ingredients list.  If it says something like tomatoes and water (and probably a bit of salt,) then that's your "Green Light" that this is a good product to buy.  If the ingredients list says it contains tomatoes, water, sugar, etc., that is proof that they have ADDED sugar to the product instead of it just containing the sugars that naturally occured in the tomatoes in the can.  Bear in mind that they get tricky, too, and try to disguise the word sugar sometimes by giving it a different name like:
sucrose
lactose
glucose
dextrose
fructose
maltose
high fructose corn syrup
cane juice
cane syrup
etc. etc. etc. etc.  The list goes on and on.  The big food companies will go to no ends to trick us into eating sugar.  And of course, if you ingest refined sugar, you'll constantly crave MORE refined sugar, and you'll be in an endless cycle.  Do a google search on the different names they use on labels for sugar, and it will make your head spin.  There are dozens of them!

Sugar isn't the only thing to look for.  Take the example we saw on the message boards the other day, coincidentally, concerning KFC's Kentucky GRILLED Chicken.  Logically, it seemed like it would be an awesome food choice, and in fact, my husband had planned on buying some for us last weekend to try out. I'm glad I found out about it before he spent our money on it. On their website, the nutritional facts seemed pretty harmless, and in fact, made it look like something we would want to eat too.  But on closer investigation and digging deeper into the website until I found the ingredients list, these things were awful!  They're obviously marinated in an unhealthy solution of stuff including rendered beef fat!  (I must say that they made the ingredients list very hard to find, too, compared to the nutritional information which was far easier to locate.  Hmmmm...very tricky.)

If Let's Do Lunch does one other thing for you in the first week, before you have probably even lost your first pound, it will be that it opens your eyes to the things that have been added to your foods.  When I eat a bowl of tomato soup, I don't want it to have a list of thirty ingredients--many of which sound like chemistry experiements--when I really want tomato soup!  When we buy a can of beans, we want it to be a can of beans, not a can of beans floating in a high fructose corn syrup solution.  Get the picture?

Another thing to know is that on the ingredients panel, they list the ingredients in the order of the quantity of each item is used.  Using the example of our can of tomatoes, let's say that the ingredients list says "Tomatoes, sugar, water, salt, oregano, onion, garlic." In that instance, sugar is the second most prevalent ingredient in the can.  If, on the other hand, it says "Tomatoes, water, salt, oregano, onion, garlic, sugar," then there is a much lesser amount of sugar.  It would be better not to have it at all, of course, but of those two choices, the latter would be the much better option.

The book gives great advice about this subject, and I urge everyone to use the book as their main resource for gathering information.  However, you can start being a super-sleuth and reading the ingredients panels straight away, and get a head start on your journey to Skinnytown.  :thumbsup:
