This looked so good had to modify a little to make it more LDL friendly.
Plantain should only be an occasional thing but not sure it is any worse than potatoes.
I'm sure that cauliflower could also be used instead of plantain.
Grilled Chicken, Plantain, and Pineapple Skewers
Servings: 8
Cook Time: 25 min.
As these skewers cook, the smells of grilled plantains and pineapple will waft over your senses like a warm tropical breeze.
Ingredients
8 chicken thighs (use breasts for LDL), boneless and skinless, cut into 1 1/2 inch chunks
4 1 oz. strips bacon, cut into 1 1/2 inch pieces Omit for LDL
1/2 pineapple, peeled, cored and cut into 1 1/2 inch chunks
2 plantains, ripe, peeled and cut into 1 1/2 inch chunks
1/2 cup pineapple juice
1/4 cup lime juice
2 Tbs oregano, chopped
2 garlic cloves, minced
1/2 cup vegetable oil
Pineapple Dipping sauce
2 tsp vegetable oil
1 large onion, minced
10 ounces jar of pineapple fruit spread
Directions
On eight 10-inch skewers, thread chicken, bacon, pineapple and plantains, alternating ingredients.
Set skewers on a tray with sides or in a glass baking dish.
In small bowl, stir together pineapple juice, lime juice, oregano and garlic cloves.
Pour pineapple juice mixture over skewers, turning to coat all sides thoroughly.
Cover with plastic wrap and refrigerate for at least 30 minutes, and up to 24 hours, turning skewers occasionally.
Before cooking chicken, prepare pineapple sauce.
Prepare grill.
When coals are hot, lift skewers out of marinade and brush lightly with vegetable oil.
Grill over medium-hot coals for about 20 minutes, turning often.
Stir remaining marinade into sauce. Boil sauce over hot stove, stirring often, for 4 minutes.
Serve skewers hot.
Pineapple Dipping Sauce
In medium bowl, stir together vegetable oil, minced onion, pineapple fruit spread, and remaining marinade. Boil as instructed before serving.

I had never heard of them either, Wanda, until coming to Oklahoma.
Plantains are like a starchy banana. The Mexicans and Puerto Ricans use them kinda like a potato.
In the store they look like a huge green banana. They usually cook them in their green state before they ripen and become sweeter.
They fry or saute them and add them to their rice.

I love fried plantains but they are not good for weight loss!!

I tried plantains for the first time last year. They are really good. Yum! Their skins need to be almost black before they are ripe. Otherwise they will not be sweet.

Thanks, I thought that was what they were, but have never tried them. When I taught South America unit---the people in the rain forest farmed them. The text said similar to how we use the potato. I think I'll try one. Monkey reads, monkey does. JF
