I noticed in the red book that pickled beets are allowed? I love them on salads, but aren't traditional pickled beets made with tons of sugar? :shock: Roger didn't mention the beets should be made LDL by subbing splenda or stevia.
Maybe I missed something? :rolleyes:

Maybe Roger found a sugar-free brand.
I found one that had sugar instead of corn syrup.
I have an occasional craving for them and one jar over several days does me for 2-3 months.
Actually I think I have only had them a couple times a year.
I enjoy sauteed fresh beets now.
I think Wendy may have posted an LDL friendly pickled beets recipe

I love pickled beets. I buy cans of whole beets(beets, water, salt) and then open 5 cans, add 1 cup or more of vinegar, and 1 cup of splenda. I bring them to a boil, and then cool. Store in liquid in frig. They stay good for a long time. I could eat them every day over my salad. When eating out I eat them off of salad bars, and they are fixed with sugar, but it does not cause a feeding frenzy. My mom added other spices like cloves, but I prefer the taste of beets. JF
