1/2 cup vinegar, cider
3 tablespoons olive oil (I used less)
2 teaspoons brown sugar (I used 1 packet stevia)
1/4 teaspoon salt
1/4 black pepper
1 can garbanzo beans (chickpeas)
1 can navy or northern beans
1 package lima beans
3 med. carrots
1/3 cup cilantro
1 jalapeno pepper (optional)
In large bowl, whisk together vinegar, oil, stevia, salt and pepper. Stir in beans, carrots and snipped cilantro and pepper. cover and chill for 2 to 24 hours stirring occasionally.

bgsumom, this sounds good. I am a huge fan of cilantro; can't put enough on mexican food, LDL of course!

The recipe calls for one package of Lima beans......dry? Cooked? Frozen? Need more info.

Ollie, I think it must be frozen; I do see frozen green limas - not the butter beans, though.

sorry for the delay in responding..........................I've been away from the site for a while. The lima beans are frozen. I use the baby green lima beans.
