I don't have the red book with me right now so I am wondering if carrots are allowed? I really don't care for them raw, but I love them roasted in the oven and sprayed with EVOO. I eat a lot of them at a time, but not often enough to turn my skin orange, haha!

1-12-17 Carrots are fine. I LOVE all roasted vegetables. Roasting really brings out the sweetness! Have you tried roasted brussels sprouts? Slice them in half to roast them. When they are done toss them with some balsamic vinegar.

Just be sure to use whole carrots, not those fake baby carrots.

I am glad that carrots are LDL friendly. I was eating them a lot in Alaska but have not been eating them so much here in England lately- don't know why! Probably because when I think of having roasted carrots for dinner it's too late for me to prepare them. I'll plan ahead next time and indulge my appetite in a plate of roasted carrots!
