If you don't like beans
What if you just don't like beans ....green beans and peas, I can eat....I hate to buy the book if all the recipes include beans...because then I won't use it, so are there other recipes besides ones that contain alot of beans...

Do you like chili? What about BBQ beans? I know it's hard to believe, but in most of the recipes you really can't tell that you're eating beans...really. And they are such a powerhouse of nutrition as well as cleaning out our arteries and stabilizing our blood sugars. I hope Niki will come on and sing the praises of beans, because she knows so much more than I do, but I hope you will give it a try before you make up your mind.

Hi Nunni and welcome.
Yes there are other recipes in the book that do not contain beans. When you asked that question it brought out the "Monk" in me, if you are familiar with that show,.........so, I had to know the answer to your question!
Right or wrong, I counted 67 recipes with 46 of them containing NO beans. One of my favorite's is R.M.'s Made Rights and it is listed on this website:

I didn't jump in and buy the book myself. I found it in our library. After reading it, I knew I wanted the book. Just like this website, it too is a great resource for eating the Let's Do Lunch way plus Roger's story was very interesting.
Ok. Now my inner "Monk" can settle down.

I do like beans but haven't cooked with them much. I usually open a can and add to chili or salad but haven't started from scratch - soaking - cooking. I did my first last night. I soaked a whole bag of pinto beans and this morning was shocked at how much they had GROWN. I cooked them and enjoyed them for lunch. Well not the whole batch - just a bowl full. Anyway, can't wait for my book to arrive. I already posted on another - but am wondering if you can freeze them after they are cooked? Do you save the liquid?

Yes, you can freeze the beans. I'll make up a batch of 2-3 different kinds, usually garbanzos (for hummus and Israeli Chickpea Soup), red (for chili and other soups) and white (for beatato cakes and more soups) and freeze them in pint sized bags (about the size of a can of beans) and stack them in the freezer to use whenever I need them.
With canned beans, unless the recipe calls for using the liquid, I always drain and rinse the beans. The liquid contains the stuff that tends to make you "repeat" . When you make your own, hopefully there won't be much liquid left. Hope this helps.

Thanks Pat, I actually had to add water as I was cooking them. I didn't realize how expansive they get. I didn't have enough water in them in the first place. So I added and then ended up with quite a bit of liquid. I'll get this with trial and error. The nice thing is that I can always come here and know that I will be encouraged and helped with anything. You're welcome, Bonnie. If I'm making something, I always double or triple the recipe, since I'm doing it anyway, and then I portion out servings into freezer bags or plastic containers and freeze them. I have loads of soups, Mary's Taco and Pizza Soup, Roger's Burgers, R.M.'s Made Rights, Meatballs in sauce, etc. in my freezer. I do this for a whole weekend and then for about six weeks, I just take what I want out of my freezer. This makes it quick and I have no excuse for not eating LDL approved foods.

i like the idea about freezing the soups. that is where i would get sick of something...like if i were to make a pot of soup and have to keep eating it everyday so it wouldn't go to waste. going to go get some freezer bags in the morn

Nunni I was so anti-bean it is not even funny. I truly thought I hated them. The first can I opened and smelled I gagged! lol However I have found that these recipes and a few of my own with the right spices etc...WOW they are amazing. I am a bean lover now. Give it a shot and you might learn that you do like beans

Jazmyn, someone else alluded to the fact that if we don't like beans it's probably because we never had them cooked right or cooked with the seasonings we personally like. You're certainly a testimony to that. Welcome!

I agree with everyone, when I first started I was scared that I would want to quit because of the beans. But I have also grown to love beans and now eat them in different ways every day. They are very filling and they curb my cravings for bread and potatoes which I didn't think was possible!!
I hope you decide to stay and try more beans, maybe you will grow to like them too!!
