Wow...I hit the jackpot! I love to cook in my slow cooker during the school year. I copied 4 recipes and am excited to try them so I may not wait until fall. Eating the LDL way has renewed my interest in cooking. I had been on several diets that were so restrictive, that it killed my former joy in cooking....too much stuff to count and measure and too hard to figure if a recipe was allowed. Now I just make sure ingredients are LDL and then enjoy the finished product to my hearts content.

Thanks, Renobabe! These look wonderful! I love my crockpot. I think I will make the Main Dish Baked Beans for the Fourth. I think I will start with cooked navy beans rather the the Bush's FF Baked Beans and use my own SF BarBQ sauce to cut down on sugars. And there are so many recipes to choose from. Thanks for posting all of them! I wanted to ask but didn't want to be greedy!!

Thanks for taking the time put these recipes on the boards!
I tried the Chicken with Applesauce recipe as a jumping off point for sautee'd chicken breasts the other night. I didn't have the patience to wait for the crockpot, so I sautee'd some onions and garlic until they were almost starting to caramelize, then added the chicken breasts and browned them a little on both sides, and the onions were getting golden. Applesauce over all to simmer in, and voila! Dinner (well, dinner for my hubby, and lunch for me for the next day)!
It was really yummy. I love all the ideas that get tossed around here -- there is sure no reason to get bored with Let's Do Lunch!

OOOO I can't wait to try these! I am going to look through my cupboard when I get home from vacation and see what I have that I can make without going to the grocery store...I have made a resolution to clean out my cupboard and my freezer before buy anything except essentials...I think these will be perfect recipes for that!

Thank you so much for your good heart, and these good recipes, which you've so generously shared. As Lizzy said in another post, you've put a lot of work into this thread, and it shows. One of the (few) good things about working a 12 hour shift is the potluck crockpot dinners we often put together. We take turns bringing a "loaded" crock pot to work, and plugging it in just before shift report. Depending on what we're having, "breakfast" is generally ready in 6 to 8 hours, and the meals are the kind that stay hot, so even if there's an emergency, we can still grab something warm, delicious, and nutritious to eat on the run. Someone asked me why so many health care providers are fat. A lot of it has to do with our shifts, our schedules, and the fact that in the early AM hours, take out junk food is often the only option. Not making an excuse...just an observation.

I found these recipes before I went to work and since I didn't have time to start one in the crockpot before I left, I called my husband and walked him through the quick method to soak the beans. I chose the Tuscany Garlic Bean Soup. Unfortunately, I didn't have any dried white beans but I did have Pinto beans. I rinsed my beans and threw everything together over lunch and let it simmer for dinner.
The recipe is absolutely wonderful. I think the pintos were a little heavy for it so I will definitely use white beans next time. But talk about taking lemons and making lemonade, I took the leftovers and smashed them (I didn't have all that much juice in the first place) and I bet they are going to make killer Mexican Eggs in the morning. I already have the chicken thawing to start the Chicken with Applesauce in the morning. Thanks soooooo much for these recipes, Renobabe. What a blessing!
The recipe is absolutely wonderful. I think the pintos were a little heavy for it so I will definitely use white beans next time. But talk about taking lemons and making lemonade, I took the leftovers and smashed them (I didn't have all that much juice in the first place) and I bet they are going to make killer Mexican Eggs in the morning. I already have the chicken thawing to start the Chicken with Applesauce in the morning. Thanks soooooo much for these recipes, Renobabe. What a blessing!

Hi, everybody!!! I fixed the main dish baked beans for the Fourth. Never told anybody they were LDL!!! Hehe! My dd was very upset went folks went back for seconds!! She really liked and we had maybe a couple of spoonfuls left!!
