If you like the flavor of pumpkin pie, try this! It makes a light, fluffy pudding (almost a mousse-like dessert.)
INGREDIENTS:
1 X 15-oz. can pureed pumpkin
2 tsp McCormick's Pumpkin Pie Spice ( a mixture of cinammon, ginger, nutmeg, allspice)
1/4 tsp. cinnamon (optional)
1 x 12-0z. pkt. SOFT tofu
2 Tbsp. Splenda
1 Tbsp. Honey
Blend all of the ingredients together in a blender or food processor until liquidized. Pour into individual parfait cups, martini glasses or serving bowls. Cover and refrigerate for 5 hours or overnight.

Sounds wonderful. I unfortunately think the tofu is not on the program. Wondering if you could whip some beans and somehow implement with those ?

I don't have any idea how you would use beans instead of tofu in this recipe. I only posted it because there was someone looking for it. Mary's recipe was found (not by me) but was buried into another reply. I would probably make this once in a great while if the tofu is a no-no.
