Marinated Italian Salad
2 cans sliced water chestnuts
1 lrg head broccolli
1 lrg head cauliflower
1 cuccumber sliced
2 chopped tomatoes(optional)
1 med jar green olives drained
1 can black olives drained
2 cans red kidney beans drained & rinsed well
2 tbs minced garlic
2 dry pkgs zesty italian dressing( make as directed for lite)
Try to make day ahead to marinade. Mix all ingred. in large bowl, add zesty italian dressing and mix well.
I used cannola oil. I tried olive oil but it didn't work well.
The original recipe called for cooked spaghetti added. Salad works with any veggie you want to add.

Yummy. Sounds great.
I have been using the Light Zesty Italian Drsg on my bean salads.
I just throw together any kind of beans and chop up salad fixin's and throw it together.
Haven't thought about raw broccoli and cauliflower. Will have to add them nesxt time.
