Spicy-Garlic Black Bean Burger Soup

Ok, this is my first day with the "Let's Do Lunch" plan and I just finished my first homemade soup and it was excellent, so I thought others might like to try it too. Let me know what you think!!

1 - Tablespoon Olive Oil
2 - Tablespoon Minced Garlic
2 - Medium onions chopped into large pieces
2 - Tablespoon Italian Herbs (McCormick Grinder)
¾ lb Ground Chicken
¾ lb Ground Sirloin
1 - 15 oz can organic Corn
2 – 8oz cans organic black beans
1 can Ro*tel Original (This gives it a nice little kick)
1 28oz can crush tomatoes
1-4 cups Swanson 99% fat free beef broth


In 4qt Stock Pot add 1 tablespoon olive oil, minced garlic and onions, cook until onions are translucent. Add all ground meat and cook on high until browned, then add beans, corn, tomatoes, and Ro*Tel. Add 1-4 cups beef broth as needed to maintain desired thickness. Simmer over low heat for 15-20 minutes then serve.

Easand - This sounds wonderful!  I'd love to try this, but don't know what Ro*Tel is?  Thanks so much.

rotel is a brand name of chopped tomatoes in a can that you can buy in the tomato section of the grocery. they have added peppers or green chilis and spices or they even make is hot.  good stuff and it is sometimes used to make cheese caso dip.
