substituting for cottage cheese

Post by wan2bthin »

Hello!  I am soooo excited because today is my second day on LDL.  I would like to know if I can substitute low fat or fat free ricotta cheese for the cottage cheese when I make Brando's Lasagna.

Also, I made Ron's Awesome Chili this morning for today's lunch, and it was delicious!    *love*

Hi Jerzygrl09!  The recipe was from the LDL recipe cards.  Here it is:

Ron's Awesome Chili

3/4 lb. ground turkey (white meat skinless)
1/4 lb. lean ground beef or sirloin
1 cup fresh chopped celery
1/2 cup fresh chopped green pepper
1 chopped onion
1-16 oz. kidney beans (Bush's)
1-15 oz. chili hot beans (Bush's)
2-28 oz. cans whole tomatoes, cut up
2 T chili powder
1tsp. salt
1 bay leaf

Brown meat and onions.  Add remaining ingredients.  Simmer, covered, three hours.

~ I didn't add the kidney beans.  Instead, I used 2 cans of the chili beans.  I couldn't find hot ones, so I used mild.  Also, I used crushed tomatoes instead of whole.

Enjoy!
