Butternut Squash Casserole

Butternut Squash Casserole
Butternut Squash Casserole
Ingredients:
1 medium butternut squash, peeled and deseeded
2 apples ( I like Granny Smith)
3 packets splenda (make as sweet as you like)
2 tbsp ICBINB
1 tbsp Garbanzo flour
1/2 tsp salt
1/4 tsp cinnamon
1/4 tsp nutmeg
Preparation:
Pre-heat oven to 350 degrees.
Using a food processor, slice the butternut squash and apples into thin pieces. Or, if you don't have a food processor, you can chop into small dices. Place the squash and apples into a baking dish or casserole dish.
Mash together the remaining ingredients with a fork until crumbly, and sprinkle over the apples and squash.
Bake for 45 to 55 minutes.

Bama,
I must have been tapping into you. I made a similar recipe over the weekend. I used some browned vidalia onions, cinnamon, a little stevia and pureed the whole thing. It was so good. Even Zack tried it bc the cinnamon made it smell so good.
I will try it your way the next time.

what is garbanzo flour?
Wendy I think the garbanzo flour is garbanzo beans ground up until it becomes flour like. And I think corn starch is not good to use on LDL. Maybe some one who know more will jump in and let you know for sure.

Yes, The Garbanzo Flour is made from Garbanzo beans. I use it in several dishes that normally call for flour. It's a great substitute!

With two small kiddos I don't get on here as often as I would like to. I've almost reached my goal (three more stubborn pounds), but of course who wouldn't like to lose more! Mostly doing LDL along with my husband (who has lost over 60lbs) to eat healthier and feel better. Challenges... yes, I definitely have them. lol. I work nights so I'm constantly bombarded with coworkers ordering take out and celebrations (who knew there's so many reasons to eat cake!?!).

Hey, Southernyankee, could you use blenderized carmelized vidalia onion with cinnamon and/or maple flavor for your Salmon glaze? It was mentioned on this thread and thought of you. Sounds good to me.
