Tropical Pineapple Chicken
Tropical Pineapple Chicken
10 skinless, boneless chicken breasts
1 (8 ounce) can crushed pineapple with juice
1/2 cup No Calorie Sweetener, Granulated
2 tablespoons lemon juice
1 teaspoon mustard powder
Directions
1.Preheat oven to 350 degrees F (175 degrees C).
2.Combine the pineapple (with juice/ liquids), Granulated Sweetener, lemon juice and dry mustard in a small bowl. Mix all together. Place chicken breasts in a lightly greased 9x13 inch baking dish. Spread the pineapple mixture over the chicken. Bake in the preheated oven for 50 to 60 minutes.

As Mary say's "It's easy-peasy". Plus, it sounds really good too. :thumbsup: However, I have a question -- 10 that's TEN chicken breasts? That is a lot of chicken for just one small can of pineapple.

That is what the recipe calls for but I plan on using only 4 to 6 since that is what I use when making recipes. I would think 10 would make the sauce quite thin.

This is the best sounding recipe I have seen on this whole site. :O) I will use only four chicken breasts. Actually I might half the sauce and just do two. I do not like reheated chicken or any meat. Could have one for lunch and the next day have the second cold in a salad.

This REALLY sounds GOOD! I finally have found we can eat chicken breast at home when cooked on my George Foreman grill . I've tried a few of the other recipes but the chicken breast is always too dry . We love pineapple so this may really work. I'll try it next week, already printed it out and saved it in my Recipe Folder .

I fixed this for lunch today. Very good. I added a couple of tablespoons of teriyaki sauce to it and it was delicious. I also fixed onions, greens peppers, pineapple and mushrooms on skewers and brush with olive oil. Very good.

THIS RECIPE WAS AWESOME!!!!! I made it today and it was soooooooooo gooooooooood. I used 4 fresh chicken breasts in a 8" x 8" pan. The chicken was so tender. My DH loved it, too. I had to stop myself from eating 3 breasts (only ate 1 with LOTS of willpower). It was even better than my Foreman grilled chicken. Thank you, Wendy for this recipe.

I made it myself yesterday and loved it. I am making it again today with teriyaki and garlic sauce in it. Can't wait for it to get done.

I made it also and it was delish. I was not sure of the purpose of the 1/2 cup splenda. It was sweet enough for me so I left it out. Cooked it in the turbo oven at 350 in the glass bowl (no racks or pan) for 1 hr. I think next time I will add chopped onion and sweet peppers to the sauce also. I put a pinch of ginger in the first batch also. Used the juice of one fresh squeezed lemon. I love it! Thanks Wendy. This is a chicken staple for me!
