They can be eaten any time. I have never made hummus but I eat lots of beans in soup and other dishes.

Re: How Healthy is Hummus
Shari,
I believe the hummus recipe you are asking for is one that Julie make for our first LDL convention in San Antonio. I couldn't find it in the recipe section either, but found it in our postings about the convention. She made the recipe for a crowd. But, it can be altered to feed less people -- use your own judgement. I made it using canned garbanzo beans and it turned out great.
Jalapeno Hummus
1 Can of garbanzo beans, or a Bag of Chickpeas Soaked and Cooked Well
5 Fork Fulls of Sliced Jalapenos(including seeds) from Big Jar at Costcos
Couple of short pours of jalapeno brine (the liquid the peppers come in).
Couple of short pours of EVOO
Salt to taste
Optional: Couple of Tablespoons of Cilantro/Parsley
Optional: A bit of lime juice
Optional: A bit of Worcestershire sauce
Blend all ingredients well
