peeling a butternut squash
Does anyone know a good way to peel a butternut squash? I heard that if you microwave it two minutes, it makes it easier to peel. I did that last night, to make baked fries out of it, and it was still hard to peel. The butternut squash fries were delicious, but it sure was hard to peel. I also heard that you can peel them after you make fries out of them, which I kinda did half way through, since I was having difficulty getting all of the skin off of it. Any tips on how to do this more easily? Jerrie

I wash the squash, prick it with a fork, microwave it for 2 minutes, cut the ends off, use a vegetable peeler to remove the peel, cut in thirds, begin slicing and removing the seeds when I come to them by scooping out with a spoon. I had read this on the forum and it really makes it easier to work with, although still takes a little work but is sooooooo worth it! Had them last night and my husband loves them!

Jerrie,
I cook the whole thing in the microwave and it is very easy to peel, I do the same with sweet potatoes.

Re: peeling a butternut squash
I got a ceramic vegetable peeler and it works wonders on butternut squash.
I think I may try some BN fries this evening for the grandkids.
BTW my Turbo Oven bit the dust.
The heating element quit. It is now just out of warranty so they told me all they could offer was to sell me another one. Noooootttt.
I may think about getting another one when they do a better heating elelment or a replacable one.
I now have more counter space! But I will miss the broiler function.

rodie if you have not tried the butternut squash soup you need to. It is my favorite soup even over taco soup.
Linda I wish I could remember when I am in town to look for one it would have to be easier to use then my old metal one.

If you love butternut squash and are pressed for time peeling and cooking one. I did find butternut squash in small bag already cubed in the produce section at Wal-Mart. I have cooked it in the Frydaddy Pot with a little olive oil and the frozen seasoning mix (onions, peppers, and celery) and then when tender threw in a can of mixed veggies. The butternut squash did hold me kinda like the sweet potato did.

Thanks everyone for the info on how to peel a butternut squash. I didn't even think to check youtube. Thanks CQ for the link.
I think I need a really good vegetable peeler. Maybe a sharper paring knife would help too.
Linda thanks for the info on the already chopped ones in the bag. I didn't realize they were sold like that. Sorry to hear that your turbo oven broke down. I just hate it when something breaks down shortly after the warranty is up!!!
I actually have some butternut squash fries in the oven now, as my daughter requested some for a snack. They are sooooo good.
Needwife - with all this talk about rutabagas, I meant to get some at the store earlier this evening when I was shopping and forgot it. I'll have to look for them soon and given them a try. Jerrie
