Re: EASY LUNCHES FOR HIGH SCHOOL STUDENTS TO PACK
back when my husband was into LDL i would pack him a few choices of fruit. a main dish of either something like what Roger said, beans with salsa and corn thins, baked chicken breast either alone sometimes with beans and/or salsa, baked fish. fresh veggies (radishes, snap peas, carrots, fresh green beens...) and lots of times a corn on the cob. he likes it plain...no butter or salt so it was easy to pop it in the microwave (husk and all) in the morn for 3 minutes and it was perfect for lunch. like what Roger said i use to pack stuff in a thermos as well. mmm...makes me want to make roasted garlic soup and croockneck squash soup. my kids LOVE both of those.

Re: EASY LUNCHES FOR HIGH SCHOOL STUDENTS TO PACK
It's been a long time since I had children in high school so I don't know what their taste buds are these days. That said, I pack an LDL lunch every day for my husband which he reheats in a microwave at work. I make several main meal dishes over the weekend and divey them up during the week (I freeze some too). Some of my favorites, and my husband's, are: Little Mary's Beef Potato Pie, Southwestern Shepards Pie, Tamale Pie, Stove Top Cassoulet, Chicken & Bean Enchiladas, Unstuffed Cabbage, Picadillo, Jerry's Easy Beef Stew, Chicken Stew... So many to choose from. When I make a dish with chicken breast in it, I undercook the chicken just a little so that when it is reheated it doesn't dry out. I include a piece of fruit or a lettuce salad with his main dish.
Soups are easy taken in a wide mouth thermos -- Bobbi's Taco Soup, Crockpot Wendy's Style Chili, Beefy Refried Bean Soup, Let's Do Lunch Pizza Soup, Quick Turkey-Bean Soup. Like Roger says, I include corn thins with the soup and because he is a man that requires more to eat than I do, I pack him a lettuce salad and a piece of fruit too.

We found inexpensive wide mouthed thermoses at WalMart ($2-$3) that we use all of the time for soup on the go. I have 3 teens who love curried chickpea soup, chicken taco soup and pizza soup.
Blessings,
Julie

Wow! so encouraging to see so many getting their teens fed good healthy wholesome food for lunch. Too bad we can't depend on the school lunches to do that but great to see parents going the extra mile with thier kids! Way to go Mom's! You rock!
