This recipe can be cut in half if you don't have a large enough pot...CQ
Ingredients:
4 cans Great Northern beans, drained and rinsed
2 cans corn, drained
2 tablespoons coconut oil
2 medium jalapeno peppers, minced
4 medium poblano peppers, chopped
2 cups chopped onion
2/3 cups diced celery
8 garlic cloves, minced
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
2 tablespoons ground cumin
1 tablespoon ground coriander
1 tablespoon oregano
2 teaspoons ancho or chipotle chili powder
8 cups chicken broth
4 limes, juiced
3 pounds boneless chicken breast, skin removed, cooked and shredded
1/2 cup chopped cilantro leaves
Fat free or low fat Mexican cheese, for topping, optional
Fat free or low fat sour cream, for topping, optional
Directions:
In a medium bowl, mash half of the beans with a potato masher until chunky. Reserve the beans until needed.
Add the oil to a large Dutch oven or soup pot (8 quarts) and heat it over medium-high heat. Add the peppers, onion, celery and garlic and saute until soft, about 5 minutes. Season the vegetables with salt and pepper. Add the cumin, coriander, oregano and chili powder and continue to saute for 1 more minute to toast the spices. Stir in the chicken stock and lime juice and bring to a simmer. Add the beans and corn and continue to simmer for 20 more minutes.
After 20 minutes of simmering, taste for seasoning, and adjust if necessary. Stir in the shredded chicken and cilantro and simmer until heated through, about 5 more minutes. Serve the chili in individual bowls topped with cheese and a dollop of sour cream if using.

I was asked to make this for the Super Bowl party in addition to all the other things we had to serve. I only had ground chicken and it turned out to be a winner...especially when I passed around the HOT SAUCE for those that wanted some REAL HEAT.
