Rosmary Lemon Chicken

4 boneless skinless chicken breasts
1 tbls rosemary
1 lemon zested and sliced in thin circles
2 roma tomatoes peeled and sliced
2 garlic cloves
1 tsp parsley
2 green onions/ bottoms and tops finely chopped
1 tbls olive oil
1/4 tsp black pepper
salt to taste
4 squares of tinfoil to wrap the chicken



Preheat oven to 425 degrees. Press garlic into a small bowl then add lemon zest, rosemary, parsley, pepper, and salt and mix them together. Rub spices on both sides of the chicken. Heat olive oil in a frying pan on high. When nice and hot, add the chicken and green onions only searing each side of the chicken. Take chicken and place one piece in the middle of each piece of tinfoil spooning excess spices and onions out of the pan on top of them. Place slices of tomatoes on top of each piece of chicken and then place lemon slices on top of tomatoes. Fold the top of the tinfoil down and the fold the sides making a pouch. Place in the oven until the chicken runs clear. Cooking times will vary depending on how big the pieces of chicken are. Enjoy!!  :)

This sounds really good.
Makes me want to start buying frozen chicken breasts again.

Linda it is very yummy! I do use frozen chicken breasts, why don't you?

Stopped mostly because of the time to cook them.
We have company now who are on meds and need healing from Diabetes and arthritis, so I will definitely bring home the breasts and get niece Linda to start cooking while I am at work. She is willing and able!
