CREAMY GRAPE SHERBERT

I made this recipe kind of by accident....but what a wonderful, creamy treat...just love the flavor...a great refreshing summer treat....
I purchased at Costco a 2# box of CHAMPAGNE GRAPES...little red grapes on the vine, really sweet tasting. They've been sitting in the fridge so I used them for the sherbert..
2# red champagne grapes
1 quart bag of FROZEN MIXED red & green grapes
20 drops of liquid stevia
1/2 c. fresh squeezed lime juice
Lime zest from the limes you squeeze
1/4 t. salt
WORK IN BATCHES....fill your food processor 1/3rd full of champagne grapes & process until liquified....pour into a fine mesh colander & press out as much juice as you can into a bowl...discard skins...repeat
Pour the lime juice, stevia & salt into the champagne juice
In processor, put half bag of frozen mixed grapes & process until fine....ADD half of the champagne juice & process with the frozen grapes until it turns cream colored & thick....
Pour into a glass cake pan........repeat with rest of frozen grapes...
PLACE CAKE PAN IN FREEZER FOR 3 HOURS.........remove & use an ice cream scoop to half fill the food processor....process until white & creamy....
Pour into plastic cups & freeze........MAKES 9 BIG CUPS OF SHERBERT....
NOTE: i KNOW THAT CHAMPAGNE GRAPES WON'T ALWAYS BE AVAILABLE...WHEN i MAKE IT AGAIN...i THINK SWEET RED GRAPES WOULD WORK JUST AS WELL.....OR YOU COULD PROBABLY TRY JUST USING organic grape juice in place of the champagne grapes...ANYWAY........this is a KEEPER.........![love *love*](./images/smilies/kiss.gif)
