My husband and I, a long time ago, used to make something we called a kayak wrap, and it included actually all LDL approved items with the exception of the tortilla. In the kayak wrap was what we named "green sauce". It had hummus in it and I assumed green sauce was a no no, but I recreated it using garbanzos/lemon/garlic/olive oil in place of hummus and it is EXACTLY the same. It's great on chicken, fish, beef, and with a corn salad. Beware, this is a thick sauce:
GREEN SAUCE 1:
can of rinsed, drained garbanzos
juice of one lemon
a little extra virgin olive oil
garlic clove
BLEND OR PUT IN FOOD PROCESSOR:
ADD:
large fist of parsley
large fist of basil leaves
large fist of cilantro
BLEND UNTIL SMOOTH....IF it is too thick, add a little water or vegetable stock
VERSION 2:
substitute tarragon for the cilantro
VERSION 3:
substitute dill for both the basil and cilantro (very good with salmon)
etc, etc.......
