All I had was regular cheese I had re-bagged a long time ago from Costco so that is what I used.  It was delicious without having any tortilla soft shell used, I used just the whole corn and beans as filler.

I'm drooling over your Chicken & Bean Enchilada recipe.

Would you please do me a favor and post the ingredients for the canned enchilada sauce? :)

Gwen I would love to but I only got the one can and it is gone.  I plan on replacing it right away though so will list ingred. then.  I read them but I can't remember what it said.  I have lost 3 lbs this week though and I have eaten it everyday so it must not have had anything to bad in it.  The corn I used was out of our garden from last year so it was delicious.

Here is a recipe to make your own sauce:
Ingredients:
1/2 cup chicken broth
3/4 cup finely chopped onion
2 cloves garlic minced
3 tablespoons chili powder
1 teaspoon salt
1 teaspoon ground cumin
1/2 teaspoon dried oregano
1 can (28 ounce size) tomato puree

Directions:

Heat half the chicken broth in a medium saucepan over medium heat. Add onion and garlic and cook 5 minutes or until tender and liquid evaporates.

Add the remaining broth, chili powder and remaining ingredients. Stir together well.

Partially cover and simmer 30 minutes stirring occasionally.

Wendy, THANK YOU.  Knowing you are careful, I wasn't concerned about bad ingredients, I just wanted to know how to capture that elusive flavor so I can make it at home. I went to my old Better Homes & Gardens cookbook to find a recipe for homemade enchiladas once.  The recipe started with "one can of enchilada sauce".

Congratulations on another 3 pounds, lady!

Joyful
You will just love it and it was very easy to make.  With the corn and beans in it I didn't even miss not having it wrapped in tortilla soft shells.

B:  Orange, Pineapple & Lemon Smoothie
L:  Apple
D:  Italian Spaghetti Chicken w/ Cheese melted on top
    Watermelon

We are leaving tomorrow morning pulling our trailer to Coeur d'Alene for a week end of conferences.  We were trying to decide what to do for our 24 year anniversary and found out there was a christian conference going on with a speaker we have been wanting to hear for a long time.  It sounds like we could be in some snow tomorrow while traveling so please be praying for us as we travel.

GWEN
I picked up a can of enchilada sauce today and here is the ingred:
water
red chilis
modified food starch
dehydrated california chili pods
soybean oil
salt
distilled vinegar
dehydrated pasilla pods
garlic & spice

It says 25 calories per 1/4 cup serving

Wendy,

I too have your enchilada's on my menu list for next week and I bought a can of the sauce yesterday.  The ingredients listed are the same as yours but the can is only a 10 oz one so I hope that is enough for your recipe.  The brand I bought is La Victoria, which is ironic because my given name is Victoria so it must be good   .

Enjoy your weekend and HAPPY ANNIVERSARY  :rose:  :rose:  :rose:

Happy Anniversary, Wendy!  It looks like the homemade (again!!!) sauce would be better.  The modified food starch would not be the best thing for us to eat.  Pam

I can cook generic Mexican, but see I'm going to have to visit the Cuban market downtown for a variety of peppers to get the flavor I crave if I plan to make my own sauce.  I think the canned is probably acceptable for occasional use because the mod. f.s. is spread out through a big dish.  However, I have a feeling Roger Troy would be more concerned with the amount of cheese in this dish and might suggest trying to use a little less.

Poor Wendy!  We may be picking your wonderful dish apart unnecessarily, because you lost THREE POUNDS the week you ate this almost every day.  It's obvious you know what you are doing!

Congrats on 24 years together.  Drive safely on your journey, and be sure to tell us about the conference speaker you saw.

Went into Missoula at 6 am this morning for a back procedure where they burn the nerves to relieve the pain.  I couldn't eat anything after last night so didn't have any breakfast.  One good thing I found out, my blood pressure was so low they couldn't take it with the electronic machine and had to take it manually to get a true reading.  It was I think they said 108/45 or some such low number, I had not taken any blood pressure meds since early the night before.  They put you almost to sleep so when I got home I was sleeping and cold most of the day.  I woke up to cold symptoms so I am going back to bed soon.  Decided maybe the egg drop soup would help tonight so made it, was very good.

B:  None
L:  Watermelon
    Chili Omelet
D:  Orange, Pineapple & Lime Smoothie
    Egg Drop Soup

EGG DROP SOUP

6 Cups Low Fat Chicken Broth
2 Tbs Corn Starch in 2 Tbs Water
2 Tbs Low Sodium Soy Sauce
1 tsp. Minced Garlic or Garlic Juice
1 pkg Splenda
2 Eggs, slightly beaten
Salt & Pepper to taste
2 scallions sliced thin ( green tops included)

Bring chicken broth to boil.  Mix together corn starch, water & soy sauce and add to chicken broth.  Add onions & garlic.  Stirring occationally  for 20 minutes.  Remove from burner and slowly pour in beaten eggs while stirring with a fork.
