Hi Wendy!
Congratulations on your weight loss!!!  I love your new profile picture!!!  I have always enjoyed reading your journal and trying your recipes.  I just copied down your citrus smoothie recipe and I am going to try it.  I haven't been online much so I am spending some time today catching up!

Lord,
Grant Gloria time to get her life together and fulfill Your purpose for her. Heal her from the top of her head to the soles of her feet and open the eyes of her understanding on how to stay healthy.
In Jesus name,
Amen

wendysgoodnews wrote:I have been seeing recipes on the board for Enchiladas so just had to make some today.  I used 2 different recipes and put them together to make 1 recipe.  It turned out very good and will last for days using only 2 chicken breasts.  I don't like real hot and I don't care for the green chili peppers it called for so I used regular red peppers.

Chicken & Bean Enchiladas

2 Tbs Olive Oil
2 Skinless, Boneless Chicken Breasts cut into thin strips
1/2 C. Chicken Broth
1/2 Large Onion
1/2 C. Red Peppers - diced
2 Tbs Minced Garlic
1 10oz. can Mild Red Enchilada Sauce
1 1/2 C. Frozen Corn (make sure once thawed to drain all liquid)
2 Tbs Cumin
1 tsp. Chili Powder
1 can Red or Black Beans - drained and rinsed
1 C. Black Olive cut in half
1 1/2 C. Shredded Taco or Pizza type mixed Cheese

Put Olive Oil in skillet and add chicken strips, onion, garlic & red peppers.  Cook 10 Min on med. stirring occationally.  Add all spices, chicken broth, thawed corn & beans.  Let cook on med. for another 10 Min covered.
Pour into glass dish 9 x 13 and pour enchilada sauce over evenly.  Evenly add cheese and olives over top.
Put in preheated 375 oven for 25 min uncovered.  Let set for 15 min. before eating.

*Options:
Add green Chili Peppers
Add Sour Cream before eating
Add 1/2 C. FF Cottage Cheese to chicken mixture before pouring into oven pan.

Wendy,

I made this yesterday for lunch and is was DELICIOUS.  I did misread the recipe at the very end and put the black olives right into the mixture and then topped off with the cheese, but that one little mistake didn't mess up the dish at all.  My husband and both thank you for another great recipe -- one that I will make again and again and again.

Vicki

P.S. There was more than enough leftover for my husband's lunch that I pack for him each day for work.

Wendy,

Looking at what you ate yesterday, which you said was a graduation party, I sure couldn't see anything that looks like is was not good for you.  What movie did you see?  I don't go to the movie theatre very often but if there is a flick that sounds really good I go on Tuesday to our local theatre because all showings are only $6.

Is your LDL Cabbage Lasagna recipe on the boards?  Today I am making your lemon, garlic chicken again -- it is soooooooo good!  For someone who didn't do much cooking before LDL, you sure have come a long way and I sure appreciate all the great recipes that you have contributed.  *hug* ... Vicki

Vicki
We actually watched a movie at home.  I haven't been to a movie in years.
I can't remember if I put the recipe on the boards or not.  But it is very easy.
I cut the cabbage in strips and cover the bottom of glass dish and add cut up celery.  I then make a thick spaghetti sauce with meat, onion, extra garlic and pour over the top.  I add cheese and olives on very top and cover. Bake 350 for 45 min.  When done  I put it in a bowl and mix cottage cheese in.
It is delicious and quick to make.

Wendy,

No, your lasagna recipe is not on the boards.  But I printed out your instructions because I love cabbage and am always looking for new ways to incorporate into recipes.

Wendy, you sure know how to prepare good LDL meals! What I'm wondering is if you notice that you lose faster if you just eat all the fruits you want at dinner, but nothing else? I read that some people have stalls if they eat popcorn at night, for instance. I notice that if I just eat fruit for dinner I don't feel full enough. Sometimes I just maintain when I add other LDL approved foods in the evening. Am wondering if you or others experience this?

I definately lose better just eating fruit, especially watermelon.  I can eat popcorn and still lose but not every night.  I have found if I eat soup with beans at night I will not lose weight so I have been not eating soups so much at night unless we have a dinner party.
