Thanks Cameron
I have to be disciplined most all the time because I have a goal of what I want to look like and how healthy I want to be.  I keep that picture before me so I remember not to fall off LDL.  I am also almost to my year anniversary and I want to be down 100 or more lbs by then.

I couldn't find the recipe on the boards so I just made up my own.

I took 1 1/2 cups cauliflower(cooked) and 1 can lima beans and pureed them with 1/4 c diced onion, 2 Tbs diced garlic, salt & pepper.  Then added 1/2 can canned corn and fried in olive oil.  It was delicious with a couple eggs on top.

It might stay together better with an egg added into the recipe.  You have to let darkly brown before turning over and not have it fall apart.  They really taste just like potatoes.  The first time I made them I used navy beans instead of butter (lima) beans.

Wendy,

What do you  use for your Teriyaki sauce on your chicken?

Do you have a recipe you follow or do you have a product
that you buy?

Thanks in advance for your answer,
Kathy

Today is my 1 year anniversary on the boards.  I was trying hard to make my 100 lb loss and missed it by ounces but I am still happy with how this year has gone.  I hope by next year this time to be real close my goal.  Thank you everyone for all your support in helping me make my first year and thank you Roger for listening to the voice of God.

I made a black bean and pumpkin soup today with corn in it.  I assume I got the recipe from on the boards but it is delicious.  It doesn't have meat in it so it can be eaten any time.

Wednesday:

B:  Chili
L:  Chicken breast
    Black bean & pumpkin soup
D:  Raspberry, blueberry & cherry LDL pie
    Popcorn

Wendy, you have done so well, not only with weight loss, but also with keeping variety in your food preparation.  You have given your board friends many good recipes.  Thanks.  Next year will bring you many new numbers and sizes.  May God reward you for your faithfulness in making your body more healthy and fit.   *hug* and  :D  JF

Congratulations Wendy. Your progress has been awesome and I use your story in order to encourage others. I remember when you made your first milestone of being able to walk from one end of the grocery store to the other!. You've come a long way and we are so happy that you hung in there until you proved to yourself this works and you are worth it!

I'm so happy for you Wendy...I have always thought your menus were the best on these boards.  I just wish you were my cook...lol..  You have done so well and have been soooo dedicated to the plan.  You will meet your goal, and then some.  I only hope I can get back on track even anywhere near what you are doing.  Great job....Lisa

Thank you so much everyone.  To me this has not only been a life saver but I love all the food so it has been a very quick year.

Lisa  You can do it, one day you will just wake up and know this is the day!  I truely found in the beginning that once I got rid of the cravings for bad food I never had a problem wanting to fall off.  Even now if I have a day with stress or I have eaten sugar free that has stirred up cravings I know to just eat lots and lots of fruit and I can sail  through.  The thing that has helped me the most is the very berry pie.  It is just sweet enough yet so flavorful I am totally satisfied after eating it.

Linda, Joyful and Cameron
It is people like you that have helped me stay going on LDL.  The support on this site is the greatest!  Thank you for being my on going family and helping me keep going on to my goal.

Oh, Wendy, to think you lost 99 lbs. in a year!  What a blessing and an encouragement to so many who have lots to lose!  I know that you can feel like "Why even bother? I have so much to lose, it'll take me forever!"  You are proof that it will not take forever and it is doable!

Thank you for being faithful to the LDL way of eating.  You have shown such diligence and it is paying off in great rewards.  Think back, if you can, on how you felt just a year ago and compare it to how you feel today.  Sometimes it is hard for me to remember how bad it was.  Am I the only one like that?  I've been a good weight for a year now -- not quite at goal for a year, but a year ago I was probably in the upper 130s.  I think I'd reached 135 lbs. by Thanksgiving.  What an awesome thing to find I could not only lose the weight, but keep it off for so long without trouble doing it.  Thank You, Jesus, for the LDL way of eating!  So glad Roger shared this with us all.

Wendy, Congratulations!  You are doing so well.

Wendy, at the rate you are going, it'll be before you know it!  If you haven't started some dumb bell exercises yet, start adding a little.  You want to be proactive about the problems like sagging skin and stuff that tend to surface when you lose a lot of weight.

Oh, and when are you going to put up a new picture.   You've lost a lot of weight since the last one went up.  So proud of you!
