Re: Gwennaford's Journal

Post by Gwennaford »

Hi Everybody and thanks for all your good wishes.  I haven't been very far away.  I check in & lurk occasionally when I need my spirits lifted, but have decided I was spending too much time posting and not devoting enough time to my home responsibilities.  I have been keeping busy, visiting with family and friends, recovering from the holidays, trying to get the house back in order and slowly stepping back into real life.  I prefer the holidays, however.  Maybe this year the Lord will show me a way to make every day seem like Christmas.  *hug*

With a few notable exceptions, I've stayed faithful to the Let's Do Lunch eating program.  My only real issue is only a matter of time management.  When I don't force myself to stop what I'm doing and eat at specific times, I get into the bad habit of eating the right foods, but at the wrong times, which interferes with my weight loss.  When I don't do the [glow=green,2,300]FOUR P's-- Planning, Preparation, Pre-cooking, and Packaging,[/glow]  I get into the rut of grabbing the first, fastest LDL thing that tastes good to me, which is usually popcorn.  When I find myself eating 6 to 8 batches of popcorn a day, I have to stop eating popcorn for a few days and force myself to make another choice.  I run into trouble when I run out of canned beans, frozen veg and CORN (planning), don't have fruit & veg washed & cut up, ready to eat (preparation), I get low on soups, beans, and already cooked chicken (pre-cooking and packaging) in the fridge & freezer.

It may be a gross rationalization on my part, but I have chosen to place the notable exceptions mentioned above into the category of "eating the least fattening thing you can find that still tastes good to you".  For example, over the past 8 weeks, I CHOSE to eat three slivers of fruitcake, the filling from a small slice of regular pumpkin pie, a piece of bacon, a marshmallow, a 3-gram square of Ghiradelli chocolate, and 4 halves of Grands biscuits.  I also chose to eat at Sonny's BBQ on my birthday because I CRAVE that smokehouse flavor that I can't replicate at home.  I had the salad bar, sliced beef (visible fat pulled off), smoked chicken (skin removed), one pork rib, corn on the cob and green beans, drained on napkins.  I'm sure the meat was loaded with fat and the green beans still contained a significant amount of bacon grease.  Next time I'm going to skip the beef, rib, corn and green beans (they didn't taste very good) and just have the smoked chicken and salad bar.

I was really happy to learn that a couple of things I absent-mindedly tossed into my mouth tasted TERRIBLE and I had to spit them out:  1) one of Neil's McDonald's french fries and 2) three chocolate chips.  The fry tasted rancid and dry, the chips were like chewing on candle wax.

Another reason I've been away is really two-fold.  I AM stressed and tired, my legs have been swollen from spending all day long every day in the wheelchair and the cold snap we've been having is killing most of my arthritic body parts.  I thought it would help to spend more time with my legs elevated, so I put away the computer (I can't type lying down) and checked out a few dozen books from the library, which has been very enjoyable.  So, I have been refreshing body and spirit during my three weeks away from the boards.

I have been thinking a lot about what I can do  this new year to see weight loss and feel better about myself.  I feel being so heavy hinders my relationship with people at church and neighbors.  I like to beat myself up and tell myself that no one wants to be around me.  I know it is with in me  and when I do reach out, I get so blessed.  I'm tired of hiding.  So hope this year will bring a release from this bondage.  I know God is able to help me.

Thanks for all your posts, they help me so much.  Please come back soon.

Love, Carrole

My sweet friend Carrole - It was fun being with you and Margo here while almost everyone else was away during Christmas.  Your post touched my heart.  I feel your pain, girlfriend.  To you and DAKOTAGIRL -- Get ready to be blessed beyond your wildest dreams with LDL!

Please go to the following thread and read my first couple of posts as a new member.  I was SO fat, and SO tired of living in hiding, but SO encouraged by my early success, that I just didn't want to hide anymore.

One of the fun things that I discovered during the holidays is that I can wear my off-the-rack clothes again!  It is so great to be able to wear something besides tents and robes again.  I totally enjoyed wearing jeans during the holidays.  It made me feel all casual and festive.  Granted, they are the largest sizes made without going to a catalog, and I kept them to remember how HUGE I was after I lost weight the first time -- LOL - but I am excited that they are already getting too big and I'm almost ready to move into a smaller size.

YOU BE ENCOURAGED!
Love, Gwen

Gwen,

I feel like the sun came out now that you are back.  I was praying this morning that God would bring you back to us and HE didn't fail.  I like your little bit of spunk and positive attitude that makes me laugh at times, and close to tears at other times.  I did go back and read when you started the program almost a year ago.  My, it is so encouraging to see where you are now.  God is good!

Gosh guys - it's only been a couple of weeks since my last post!  I have found myself spending so much time on the computer that I let other things slide, then I get behind, which adds stress, etc. etc. etc.  I have promised myself to limit my posting time in the near future.

Having said all that made me realize that, except for a short time I spent putting together a pot of soup, I have been sitting here since Neil left this morning.  He just got home from work and I'm still not dressed.

ya'll are a bad influence on me...  *love*

I greatly appreciate the encouragement and am already seeing how effective LDL can be - I've found the plan, now it's a matter of trying not to be impatient while I make this long journey!

This is gonna be fun!  Of course we can't race, because everyone loses at their own special rate, but we can certainly compare notes & help inspire each other.

I wonder if anyone has more than 150 to lose?  I'm going to start a new topic to ask the question.  Please sign in over there when you get a chance.  Maybe others will see us and take hope.

I hope you both can get your pictures posted soon.  If you don't know how, please email Sweet Caroline (Queenie) to help you.

Gwen,

I was thinking about the Banzo Biscuits and was wondering about putting frozen corn into my Vitamix and making some corn "flour" and adding it to the plain biscuit recipe.  Do you think that would work?  You adjust for Beanana Biscuits by adding another egg, etc.  Maybe I'll try it (unless you have and it just didn't work).

Pat - I think it would taste good, but it wouldn't taste like cornbread, if that's what you were after.  I imagine pureed frozen corn would be soft and wet, similar in consistency to canned pumpkin, maybe.

I have made them really savory spicy with chili powder, cumin, & cayenne blended with the batter & with diced jalepenos, whole kernel corn and whole black beans stirred in just before baking.

If you try the corn idea, let us know what you think!

Well, the holidays are over, my birthday is past & Valentine's Day is looming on the horizon.  Time to get myself back in the habit of journaling every day to forestall any problems.  AND because I want to wear shorts this summer!    :inlove: :sideways:

Food Journal - Monday Jan. 19

Breakfast - Slept right through it.  Neil was off work for MLK Day.

Lunch - around 2pm
  • Spicy Cajun Bean Soup with Dreamfield's Linguini (only used 2 oz. in whole recipe) and Homemade Andouille Turkey Sausage.  Will post recipe later.  Gotta do this now.
  • Grapes, Popcorn, Iced Tea w/Splenda

Dinner - 8 pm
  • Had a bowl of peas and corn that didn't quite do it for me, so I fixed
  • Teriyaki Salmon Filet with Japanese Vegetable Blend (broccoli, mushrooms, red peppers & julienned green beans) seasoned with ginger and tamari.

Night!

Food Journal - Tues. Jan. 20 - Happy Inaguration Day & Happy BDay to Sweet Carolyn

Breakfast - 7 am
  • Vegetable soups made with frozen veggies, chicken soup base & 1 oz. Dreamfields linguini.  Ate half for breakfast with...
  • Guess what ? ? ?  Popcorn and Grapes.  Have been slacking off on drinking my Dr. ordered milk, so had a tall glass of skim.

Lunch - 1:30 pm
  • Other half of the Vegetable Soup with some canned Chicken Breast -- Haven't been shopping lately
  • Seltzer with Lime

Dinner - 6 pm
  • Yellow Split Pea Soup, Mixed Vegetables with Lemon and Sage
  • Frozen Mixed Fruit w/ skim milk & Stevia; popcorn; Water -- OH and grapes !

This is the gumbo recipe I was working on.  I will post the sausage recipe separately as well as with the gumbo ...

Gumbo Ya-Ya with Homemade Turkey Andouille Sausage and Shrimp
(Inspired by Randy Jackson’s (of American Idol fame) recipe in WebMD magazine, December 2008)
Makes 12 servings

I omitted the ¾ c. of oven-toasted flour he uses to make the roux.  This gumbo is so flavorful I honestly don’t think it needs the roux, but if you like it thicker you can stir in some pureed red beans with the stock.

1 lb. ground turkey breast
3 tbsp. (or more) salt-free Cajun seasoning (I made Emeril’s Essence Seasoning recipe and omitted most of the salt)
¼ tsp. cayenne, or more if needed
¼ tsp. liquid smoke
3 tbsp. (or more) minced garlic, divided
2 tbsp. olive oil
4 ribs celery, thinly sliced
2 large onions, diced
2 red bell peppers, diced
2 green bell peppers, diced
8 cups fat-free chicken stock
8 oz. okra, tops trimmed & cut into 1-inch pieces (or ½ pound frozen)
1 bay leaf
1 lb. medium shrimp, thawed, peeled and deveined
Salt and pepper, to taste
Dark mahogany brown or black japonica rice, cooked according to package directions.

Make turkey “andouille” sausage:  Thoroughly combine ground turkey, 2 tbsp. Cajun seasoning, cayenne, liquid smoke, and 1 tbsp. (or more) garlic.  Form meat into small patties, about ½ tbsp. each.  Heat 1 tbsp. olive oil in a large heavy skillet or Dutch oven.  Brown sausage patties on both sides.  Remove and set aside.

Add remaining oil to pan and heat.  Cook celery, onions, peppers, and remaining garlic until soft, about 10 minutes.  Add mashed red beans (if using) and slowly pour in stock while stirring.  Bring to a boil and add okra, bay leaf, remaining Cajun seasoning and sausage patties.  Stir lightly only until combined.  Don’t stir too much from this point to avoid breaking up okra and sausage.  Return to a boil, reduce heat and simmer for 15 to 20 minutes.

Skim foam from top of stew as it rises.  Add shrimp and cook just long enough for shrimp to become opaque; from 1 to 5 minutes – do not overcook shrimp.  If sodium is not an issue, season to taste with salt and pepper.

Serve with cooked dark brown rice.

Turkey “Andouille” Sausage
1 lb. ground turkey breast
1 tbsp. (or more) salt-free Cajun seasoning*
¼ tsp. cayenne, or more if needed
¼ tsp. liquid smoke
1 tbsp. (or more) minced garlic
1 tbsp. olive oil

Thoroughly combine ground turkey, 2 tbsp. Cajun seasoning, cayenne, liquid smoke, and 1 tbsp. (or more) garlic.  Form meat into small patties, about ½ tbsp. each.  Heat 1 tbsp. olive oil in a large heavy non-stick skillet or Dutch oven.  Brown sausage patties on both sides.  Remove and set aside.

* If sodium is not an issue for you, Emeril’s Essence Cajun Seasoning (also known as Bayou Blast) is excellent in this.  You can also make this seasoning from scratch using the recipe on these boards, adjusting the salt as needed.

Gwen...I'm so glad you posted this! Vern and i went to a little creole cafe a while back and had chicken and Andouille sausage gumbo that was sooo good. I have been saying I was going to try and recreate it LDL friendly...and now you've done it already! I am going to make this this weekend. Thanks so much for sharing your wonderful recipes.

I'm glad the timing was good, Vickie.  That's the way it happened for me, too.  I was thinking about trying to use up some frozen okra, and had tentatively started to assemble gumbo ingredients when I had to stop to go to a Drs. appt.  Found the recipe in the first magazine I picked up, AND it was essentially LDL friendly.  And I happened to have all the seasoning ingredients on hand, which is extremely rare for me, but I had just been to Sam's and , well... the rest is history.

Maybe I was just hungry for it, but I ate it for days & it was, like, the best thing I ever tasted.  Once I had cajun seafood pasta at Shells and had been trying to recreate the spicy seasoning ever since but had never mastered it.

I like this recipe because you can really change it around to fit your tastes:  more or less spices, bell peppers, switching out proteins.

Food Journal - Wed. Jan. 21

Breakfast - 7 am
  • Yellow Split Pea Soup, popcorn
  • water

Lunch - 3 pm
  • Cajun Grilled Chicken Breast Tenders, Steamed Frozen Mixed Veg. & Corn with canned tomatoes & green chilies (thanks, for the reminder, Gene)
  • Mixed Fruit, Popcorn, Skim Milk - didn't have time to eat it all because I spent all my time CHATTING.  grr

Dinner - WAY too late - about 10:30 pm.  I should have skipped it, but I couldn't resist my gumbo soup - Used the leftover cooked chicken tenders & made another big pot of Gumbo Ya-Ya with Turkey Andouille Sausage (minus shrimp) and I threw in 3-4 cans of beans.  I prefer them to the rice, actually!
  • Gumbo soup (picked out the meat), leftover mixed fruit & popcorn.  No milk  I'm having trouble getting in my doctor-ordered milk, so I'll gave to start buying more greens to get my calcium.  I DON'T want to have to start taking those calcium horse pill supplements.  :poo:
  • Iced tea, water & Diet Rite orange soda.  very thirsty tonight.  Must be all those BEANS soaking up the water!

Food Journal - Thur. Jan 22

Breakfast - 8 am
  • Oatmeal w/cinnamon & Nuvia
  • Large Ruby Red Grapefruit - so glad they didn't freeze last night!

Lunch - 3 pm
  • Gumba YY w/T.A.S, popcorn
  • Lime Seltzer, Grapefruit

Dinner - 7 pm - I'm writing it early and committing to it!
  • Steamed Mixed Veg and French Onion Soup (Beef Broth, Toasted Onion Flakes*, a few sprigs of fresh thyme, a squeeze of fresh lemon juice & one WASA light crispbread w/a little light grated Parm broiled on top to float on top of the soup)  This was really good.
  • Garlic Turnip Greens (for the calcium) w/hot red pepper flakes (for my mouth  :)),  Iced Tea w/Lemon

* A new taste treat I just invented by accident.  I tossed a big handful of dried onion flakes into a heated, dry skillet and they browned before I got the stock poured in.  They taste crispy and yummy, so I'm going to start using them to garnish salads & veg.  Also am DEFINITELY going to make Green Bean Casserole with them someday soon!

Re: Gwennaford's Journal

Today is my day to eat my failed experiments, it seems.  Recently I tried to tempt Neil into having some of Mary's wonderful Roasted Garlic and Butternut Squash Soup by adding some white rice to it.  I added wild rice to mine and it was so wonderful, I wanted to share.  You guessed it - he wouldn't touch it.  I felt horrible about wasting a quart of that fabulous soup, so I ate it for breakfast this morning.  I weighed the pros & cons of making that choice and decided I would regret wasting it far more than I would regret eating 1/2 cup of white rice in a highly nutritious & delicious soup.  So there you have it.

Second, I wanted to try some fried green beans like they have on the pub menus as a low carb alternative to french fries.  I had some thin fresh green beans that I fried in a thin layer of EVOO and seasoned with sea salt.  They were so-so, nothing I would want to make again.  They were better with a little cajun seasoning, but they are the BEST lightly steamed with lemon and oregano!  Roger - you have ruined my appetite for junk food forever, it seems!    *love* :D

Food Journal - Fri. Jan 23

Breakfast - 8 am
  • Roasted Garlic, Squash, Wild & White Rice soup
  • Popcorn, Seltzer

Lunch - 2:30 pm
  • EVOO Fried Green Beans w/ Cajun seasoning, Gumbo YY w/T.A.S.
  • Sliced Tomatoes, Grapefruit, Iced Tea w/Lemon

Dinner - 7:30 pm
  • Steamed Mixed Veg, French Onion Soup, one Breaded Chicken Tender
  • Garlic Turnip Greens,  Red Grapes,  Ice Water

Snack - 10 pm
Watching a movie with Neil & the kids
    • More Grapes & Popcorn
