Welcome back...  Your family missed you!

How did you make the califlower casserole you had for supper?  Sounds like my kind of dish -- love califlower but there are not many recipes on the boards that use it other than for soups or with mashed butter beans.

Vicki

P.S. Happy to hear that you are healing.  After this comes therapy and I know with your resolve you'll be back on your feet in no time!

I got the Cauliflower recipe somewhere on the board I think but here is how I made it.
1 1/2 C. Cauliflower florets
1/2 C. Onion
2 Tbs grated reduced fat Parmesan Cheese
1 tsp. fresh parsley - chopped
1/2 tsp Garlic Powder
Salt & Pepper to taste
1 tsp ex. virgin olive oil

Preheat oven to 425
In med. bowl combine cauliflower, cheese parsley, garlic powder & salt/pepper
Toss to mix well and drizzle oil over and toss again.
Bake 15 to 17 min or until soft

While baking stir once and cook until golden brown - crisp tender.

I sprayed a glass cake dish to cook in oven

Wendy,

Thank you for the really easy califlower casserole recipe.  I just printed it out and am going to make it for lunch today.  Hope you are getting better day by day.

A good day today.  I cooked a great lunch and was happy to have something besides soup for a day.  I will have to cook some more soup tomorrow since right now that seems to be the easiest and it lasts the longest.  I weighed myself today and I am still losing so I guess the things I ate at the hospital that were not LDL didn't hurt anything.

B:  Refried Beans, 2 slices cheese & Fried eggs
L:  Balsamic/blackberry Pork Loins
    cottage cheese
D:  Watermelon, grape smoothie

Mikes's Day:

B:  Refried Beans, 2 slices cheese & Fried eggs
L:  Beef Stew
    Banana
D:  Mixed Fruit Smoothie
    Popcorn

Thinking of you Wendysgoodnews!
Happy for you that you didn't gain weight through your hospital experience!

I love cauliflower so I'll get busy, buy some and try out a recipe too and this one you've listed sounds delicious!

Take Care!

Hi Wendy,

I love Cracker Barrel!  When we go I always get their spicy grillled catfish, pinto beans, turnip greens and carrots... and leave off the breads... Also their grilled chicken tenderloins are yummy too...last time we were there, they also had cabbage!  Yumm!

Good to see you back and posting again.... Hope you are feeling much better.

Wendy,

We recently ate at Cracker Barrel. I had the grilled chicken tenders (6 strips), green beans, and corn. It was very yummy and very LDL and I was stuffed from eating it.

Sorry but as far as I know Barley is a grain and is not LDL friendly.. What I do Is go to search type in the item I am looking for .and I usually find my answers quickly that way

Thank you I wondered about that.  It worked out ok because she made a sourkraut soup that was delicious even though we ended up eating later then I like to eat at night.  I was down another 2 lbs this morning so was happy about that.

I found the recipe when I was first on the boards looking through all the posts for anything that I could eat while waiting for my book to come.  Here are 2 of my favorites:

Dreamy Creamy Orange Vanilla Smoothie
1 c. Orange juice
1/2 frozen banana
1 tsp. Vanilla
3 ice cubes

Add ingred. to blender and whip until smooth and creamy.

I have used pineapple juice in this to thin it out.

Tropical Breeze Smoothie

1 Frozen Banana
4 to 5 Frozen Strawberries
1/2 c. pineapple chunks
1/4 c. pineapple juice
1/4 c. unsweetened Orange juice

Blend well.  If needed add small amount of non fat skim milk if too thick.

I never add milk to any of my smoothies.

Wendy,

Fabulous!!! 2 more lost, never to be found again, pounds  *hug* .  Would it be possible for you to get your friend's sauerkraut soup recipe?  I love sauerkraut fixed any way and this is the first time I've heard about using it in a soup.

I called and got the recipe for the sourkraut soup.  She is a older lady and her idea of a recipe is what is in her head when she dumps things into a pot so I don't have any measurements but you will get the idea what it calls for.

Boil a soup bone or stew meat
put in cut up carrots
potatoes (she put in barley for us instead)
onion
garlic
dill
no salt seasoning
celery
jar of sourkraut (drained)  if you want more sour taste add some of the juice
tomato sauce
beef bouillin
thyme
basil

She said she tastes until she likes the amount of spices and that is how she knows it is just right.  She sometimes adds regular head of cabbage with sourkraut.

My older son announced his wedding for July 31st so that gives me time to get a bunch of more weight off.  I want to be down below my second goal by then.  I was down another pound today so my body must really love this way of eating because I have never been able to lose weight so consistanly as I have on LDL.  I looked in the mirror today and my face is getting so thin it is amazing.

B:  Watermelon, orange, banana Smoothie
L:  Large Green Salad
D:  bowl of Raspberries
    Cabbage & Apple Salad
    Apple Cider w/ cinnamon

Mike's Day:
B: Corn Chowder
L: Green Salad
   Mixed Fruit Smoothie
D: Wasa Cracker w/ spinach dip
   Apple Cider
