Re: Wendysgoodnews 1st day to Weight Loss
My husband and I are not fish eaters but since seeing on the boards how important fish can be I bought some salmon and then was not sure how to cook it. I found a recipe on here called Parsley Garlic Roasted Salmon (maybe someone gave it to me on the boards) and thought it sounded like it might be ok. When I made it I added a tsp of rosemary to the blend. I loved how the dejon mustard blended with the other ingred. tasted. I guess this will be my new recipe for the week.
When I eat this LDL food I am amazed that I didn't figure out years ago how good it all tastes! I was eating the salmon tonight thinking I would rather be eating this then sweets any old time. It is a miracle I can think that let alone say it out loud to my husband
I can't wait until I have a dinner party again and I am going to get more salmon and cook this for everyone.

Re: Wendysgoodnews 1st day to Weight Loss
I made what was supposed to be a prize winning chili recipe off the web. I didn't find it had all that great of flavor, it called for sweetener, vinegar & salsa in the ingred. It has too much of a baked bean taste to it but will eat it this week until it is gone. Maybe I will doctor it up a bit by tomorrow.

Re: Wendysgoodnews 1st day to Weight Loss
My cousin that stayed with me during surgery called today to say when she got home she put her husband on LDL. His blood sugars are staying in the double digits and he is feeling great. She said he has been so excited about LDL that he has begun making his own smoothies in the morning before lunch and when he is home is is always reading thru the book and finding recipes for her to make.

Wendy,
It so warms my heart when I hear of one more person beginning LDL. Your cousin's husband has great role models in you and Mike!

Re: Wendysgoodnews 1st day to Weight Loss
Wow this week went by so fast. I was searching the recipe boards today for new recipes to make for tomorrow nights Bible study. I came across a crustless lemon pie. I was so thrilled since I love lemon pie and was thinking this is one of those things we can't have anymore. Isn't this just the most wonderful way to live!

Wendy,
If you made the lemon pie, please give a review on how you and your ladies liked it. Personally, I thought it was really time consuming to make and I had to add more cornstarch while cooking the filling to get it to thicken enough to look like lemon pie filling. I was also disappointed it was sooooooo sour
that when I ate another piece the next day I had to sprinkle additional Splenda on it to make it palatable for me.-

You were right the lemon stayed thin even though I added extra corn starch. I read your post before hand so I added extra sugar sub. but then it was a bit too sweet. I will have to work on this before making it again I think. I made a few salads for Bible study and they all turned out pretty good. I ended up wearing part of the tomato & cucumber salad. I thought I was going to turn it upside down to let the oil and vinegar sink down through the salad but the lid wasn't on tight enough, oh my what a mess. I saw a pastor on Sky Angel say,"I am not a man that cusses but I was upset enough that if someone had of written a bad word on paper I would have signed it." That was me today.LOL
B: Got busy and forgot to eat
L: Taco Salad w/ salsa
D: Roasted Garlic & Butternut Squash Soup
Mock Potato Salad
Poppyseed Coleslaw
Crustless Lemon Meringue Pie

Wendy, I just love lemon pie or did, so if you get this perfected, please pass it to me. I have worn some veggies as well. Those plastic lids don't seal as tightly as the old Tupperware, but sooo much less expensive and handy. Glad your cousin is starting. I think my whole town is trying it. Ha If they embrace this woe, it works. Cooking from scratch is so much fun and sooo healthy. We still eat out quite often, but am I picky or what! I haven't had the desire to return to China One, because the MGS is so heavy. I may use the grill when we go. My hubby misses it, but he doesn't need it.

Re: Wendysgoodnews 1st day to Weight Loss
I tried Gwen's Banzo bean steak fries tonight. I didn't cook them quite long enough because the onions were starting to get too done. I will remember next time to put the onions in a bit later. They still tasted wonderful with the bit of butter and onion plus a couple eggs on top. You do have to use your imagination a bit that these little round things are fries but the taste is great.
I never thought I could like taco salad without sour cream. But with the salsa on the meat and refried beans I love it, but then my tastes have changed so much since starting LDL I bet months ago I wouldn't have liked it as well this way.

Wendy,
Are the steak fries different from the home fries recipe? I did a search and cannot find a banzo steak fry recipe.

Re: Wendysgoodnews 1st day to Weight Loss
Oh sorry no they are the same thing just got the wrong name for them. I guess when I saw the recipe I was thinking of the steak fries we used to get at Cracker Barrel and we would bring them home and fry them in the morning with eggs. They were really good and that is what these chick peas reminded me of.
