NJ,
Way to go with the Taco Salad and the rest of your eating! One other thing you might want to look for on the menu (especially if they have low fat cheese). Many Tex-Mex places here have a dish that is basically fajita meat, grilled onions and bell pepper, and cheese spinkled on top and cooked until melted. I love fajita meat and it is often leaner than the ground meat. The cost is often less than fajitas....closer to that of the taco salad and less food is wasted. These dishes are called different things at different places (and I can't seem to remember any of them right now).
Blessings,
Julie

Re: EnJae's Journal
The Carne Asada I have ordered is usually as Julie described, but is usually also the most expensive selection on the menu. I guess that's because the meat is not stretched with a bunch of tortillas & beans & rice (those are served on the side). Maybe two people could share an order, substitute a double portion of beans for the rice, omit the tortillas and add dinner salads. I'd probably dump the salad onto the dinner plate. WAIT... that's the same as fajitas, isn't it
No wonder it sounded good.
That's what I'm going to order next time, and take half home in una caja de perro.

Hey--what's happening to all the smiley faces? New ones are cute, but deleting the old ones is leaving these ugly blanks.

Sorry about that. Unfortunately, without combing every post to see what smiley was used, there is no way to replace them.
Unfortunately, I don't have time to go through every post.

Re: EnJae's Journal
Let's see. The last day I posted was the 4th; today is the 7th.
I honestly cannot tell you what I ate on Friday and Saturday. I know I stuck to LDL. Friday I got off work at 5pm then stayed with a friend. Spent the night with her on both Friday night and Saturday night because her sons were out of town and she'd had her pain medicine changed that day and we weren't sure what kind of side effects she might experience on the new meds. She did fine.
Then I got home EARLY this morning to get dressed for church and found an email from my father to my natural brother (who then forwarded it to me) about one of my step-brothers shooting himself earlier in the week. He was not discovered for several days. I kind of fell apart; then went to church (-- very late --) anyway.
My foster family kept me with them after church. I ate grilled chicken breast, veggies, and charros (pinto beans)
I am craving chocolate cake. But that is just a lie my body is telling me, to deal with the internal stress.
Now I am headed to bed to sleep off the worst of this headache from crying so hard.

Re: EnJae's Journal
I forgot to mention that yesterday I hit a garage sale and found 3 dresses that are varying stages of too tight. In about 5 more pounds lost I should be able to fit the largest one. The woman I bought them from asked how I had lost the weight I mentioned. I started telling her about LDL and she had that spark in her eyes that said "This is from God to me!"
We exchanged information and I really expect to see her on here soon. AND she gave me the gift of good coffee! Her aunt went in to make her some coffee with cinnamon and sugar in it and I left the garage sale and went to get my morning dose of "medicinal" coffee. But wait! I have cinnamon. Wonder what it would be like?
I sprinkled some cinnamon and some stevia into my cup, Waited for it to cool a bit and then took a sip.
I LIKED IT!!!!!!

Re: EnJae's Journal
Enjae,
So sorry about your brother.
As for the coffee, have you ever tried cold brewing coffee? You can make enough to last a few days (especially if you are only having one cup per day) and it has a smoother taste than hot brewed coffee. Cold brewed has much less acid, and is far less bitter. It is a real treat in New Orleans ... they are famous for their cold brewed coffee.
Anyway, if you want to try it, here is the quick and easy method:
Cold Brewed Coffee
Yield: 2 Drinks
1/3 cup ground coffee (medium-coarse grind is best)
Milk (optional)
1. In a jar, stir together coffee and 1 1/2 cups water. Cover and let rest at room temperature overnight or 12 hours.
2. Strain twice through a coffee filter, a fine-mesh sieve or a sieve lined with cheesecloth. In a tall glass filled with ice, mix equal parts coffee concentrate and water, or to taste. If desired, add milk. (you could also add your cinnamon)
For larger amounts, if you like it:
Makes 8 cups coffee concentrate
1 pound dark roast coffee and chicory, medium ground
10 cups cold water
Ice
Milk (non-fat can be used)
1. Put coffee in a nonreactive container, like a stainless-steel stockpot. Add 2 cups water, stirring gently to wet the grounds, then add remaining 8 cups water, agitating the grounds as little as possible. Cover and let steep at room temperature for 12 hours.
2. Strain coffee concentrate through a medium sieve, then again through a fine-mesh sieve.
3. To make iced coffee, fill a glass with ice, add ¼ cup coffee concentrate and 3/4 to 1 cup milk, then stir. To make café au lait, warm 3/4 to 1 cup milk in a saucepan or microwave, then pour into a mug and add ¼ cup coffee concentrate. (Concentrate will keep in the refrigerator for up to two weeks.)
You can always substitute the milk for water if you like!

Re: EnJae's Journal
Speaking of the sausage, I am going to have to make a batch of this when I do my menu plan this week. I think my son would love it in the mornings for breakfast!

Re: EnJae's Journal
RT;
Right now I am going from job to job and then to bed. I'm doing the best I can under the circumstances.
I have to cook real bacon for my early morning client every morning. i thought I was doing good by cutting the fat off of mine. You corrected that. So having the Jenny O's Extra Lean Turkey Bacon is an option I'm willing to live with right now.
I'm not saying I won't make the sausage sometime. Just not right now. I'm barely getting done what goals I've currently set for myself. Adding a new recipe to my repertoire is simply not an option right now.
NJ
Tori;
mail me a small sausage patty to try when you get them made...

Re: EnJae's Journal
All the way to Texas? I will have to overnight it.
That reminds me of one time, years ago, when my brother came up for a visit. We had a bunch of venison pepper-sticks and jerky made up, and he SO wanted to take some of the meat home with him. (also roasts and such) Well, he flew out, so somehow ... LOL ... the idea came up to use a small piece of carry-on luggage. He packed that thing full of venison, topped it with dry ice, and headed to the airport.
By the time he got to the scanner thing, there was a small layer of ice on the top of the luggage. You should have seen the looks on the faces of the airport people when he told them what was in it! It was sooo funny!
Of course these days, with safety regulations and all, you would never be able to do that, but at the time he did, and got home with a nice big stack of venison jerky, pepper-sticks, and roasts to put in his freezer.
