Re: Wendysgoodnews 1st day to Weight Loss
I decided I was hungry for the taste of pizza but didn't want to make the soup. So I made a flat omelet of egg with water as the crust. I put the pizza sauce on eggs after it was cooked and added some lean fresh ground pork w/ onion and added spices to make it taste like sausage. I then added olives and a little cheese. Was delicious!

I made a "pizza" with a meatloaf-type crust (as thin as possible, bake first and use paper towels to press out any grease), then top with Pizza sauce, and any other toppings+ fat-free cheese if desired. It was very good. Pam

Re: Wendysgoodnews 1st day to Weight Loss
That sounds really good too. I love pizza but after making the soup too many times I decided I needed a different way to make a satisfying pizza taste. If anyone else has other ideas let me know of recipes for pizza without flour crust. Thanks Pam I plan on trying this.

Re: Wendysgoodnews 1st day to Weight Loss
Wonder if there is anyway to use spaghetti squash as a base, like when making a spaghetti pie? And use all the pizza flavors you want...
I made some little eggplant rounds the other day, and hubby was calling them pizza wheels... I sliced them, dipped in egg with a little added olive oil,,, then dipped in ground corn thins,, baked on 400 degree's for 20 mins until golden brown, then flipped for a few more mins until both sides were nice and crisp.... then but a little spaghetti sauce on top with some ff mozzeralla. They were yummy... we also had spaghetti squash with sauce and meatballs... and salad with homemade sweet balsamic dressing... this meal was delish!

Re: Wendysgoodnews 1st day to Weight Loss
That all sounds interesting. I have not tasted egg plant since I was a small girl at a friends house. I have been thinking I need to get some and try them again. My taste buds have changed so much it is amazing what I like now that I never did before. The squash idea sound good and easy. Thanks

Re: Wendysgoodnews 1st day to Weight Loss
Hi Wendy!
I got the following recipe off the boards some time ago. Not sure who originally posted it, and I haven't tried it yet. I keep a couple of thin-crust pizzas in the freezer for my hubby, and add veggies to them when he wants pizza. At the same time, I spread some spaghetti sauce and veggies on wasa crackers, sprinkle on a shred or 2 of low fat cheese, and bake my own mini pizzas while his pizza bakes. One of these days I'll try this recipe and make a real pizza. Or try the quiche crust made from beans, or one of the other bread substitutes as a once-in-a-while pizza crust. Haven't needed it yet!
Zucchini Pizza Crust
Ingredients
2 lb chopped zucchini, shredded (about 4 medium zucchinis)
1 pinch salt
2/3 cup fresh chopped onion, chopped finely
1 medium garlic cloves, minced
1/4 cup whole wheat flour **** use popcorn flour
1/2 cup Cheese, mozzarella, fat free, shredded
1/2 cup non fat grated Parmesan cheese
1 tsp dry italian seasoning
1 pinch black pepper
2 eggs
2 egg whites
1 cooking spray
Directions
1 Preheat oven to 375 degrees F.
2 Season zucchini with salt, and let drain in colander 10 minutes. Wash, and dry very well with paper towels.
3 Combine zucchini, onion, garlic, flour, mozzarella, Parmesan cheese, and Italian seasoning. Sprinkle with pepper, add eggs and egg whites.
4 Coat a 12-inch pizza pan with cooking spray. Lay zucchini mixture onto pan, and spread to edges. Coat dough with cooking spray and bake 30 to 40 minutes.

Re: Wendysgoodnews 1st day to Weight Loss
Good ideas!
I think I will need to try some of these also as it does get difficult watching everyone eat Pizza. They do insist on keep eating it!
I tried your chicken recipe today with the apricot jam on it Wendy, We are going to eat it tomorrow though. I didn't have all of the ingredients so I hope I didn't substitute too many things! *woot*

I ate the pizza on egg again today for breakfast without meat. It was just as good without meat and takes only a little cheese with olives and both days I ate the pizza for breakfast I was down the next morning on the scales. It has taken away that want for pizza just as the soup did when I was eating it most weeks.
I hope you like the apricot chicken. I haven't made it again in a while so will have to make it again.

Re: Wendysgoodnews 1st day to Weight Loss
Do you think soy flour would work (and be LDL friendly) in the pizza recipe? I am afraid the popcorn flour would be so messy and I have soy flour ready made.

Re: Wendysgoodnews 1st day to Weight Loss
I try not to use flour of any kind and so that is what I have been trying to get away from when thinking about a crust. I have loved the egg base as the crust and have been very satisfied with that for the time being. But I am writing down ideas and recipes others have supplied. Thanks for your thought about the soy flour.
The Seder dinner was great. I don't like horseradish but ate it and all the foods like bitter herbs and applenut fruit thing. The meal it self was delicious and I was down a pound the next morning so I guess my body liked it also. The teaching was so interesting and the fellowship great fun.

Re: Wendysgoodnews 1st day to Weight Loss
Tonight is Biblestudy night so will be eating my big meal in the evening. It was funny because I got a call from a couple that comes to the meetings saying they will bring the taco soup tonight. They aren't even on LDL yet but they love the food I have been making each week and they always leave with my recipes. I made the Gingerbread brownies w/ a honey butter for the top. I like them without anything added to the top but I thought everyone who is used to eating real sweet things might need it to be sweeter tasting. I also made strawberry shortcake for those that want something different but I made the strawberries with imitation sweetener.
By the way I have been down a lb almost every day this week. I am only 10 lbs now away from my 2nd goal. I sat and figured out my loss today and it came to 64 lbs (subtracting also what new scale added) since Nov. 5th. Praise God! So I went to the back of my closet today to get out clothes I thought would not fit for quite awhile and they all fit wonderfully. I have a new outfit to wear Sunday to church that I haven't worn in probably 4 or more years.
B: Orange, Banana & Pineapple Smoothie
L: Raspberries
Pizza Omelet w/ Olives and cheese
D: Taco soup
Gingerbread Brownie
Strawberries - with no cake
