Bumping this soup to the top to declare SOUP SEASON officially started!  I figure it is cool enough somewhere and Octoberfest is going on in our town.  I enjoy watching all of the people but not all of the beer drinking, shutting down of parks and such.  My tradition for the weekend will be kicking off Soup Season with this soup:-)

If you haven't tried it....do!  Also, Costco is selling pre-peeled and cut up butternut squash.  Mmmmm, mine is roasting right now!

I have made two double  batches.  I had eight  friends in for a retirement party.  I served it, and it was the first time any had tasted it.  They ate it all---just a cup in each bowl. They all said they liked it. It was the first course.  It is soup season, here.  I bought ten squash--98 cents a piece.  They keep in a cool place. My husband cut mine up for me.  :thumbsup:  JF

Wanda -- I wish I cold find it here for just 98 cents a piece!!  What a deal!  I love this soup and I love butternut squash fries.  My plants didn't produce enough squash to satisfy me!!  I'm going to make a point to grow them next year on purpose this time -- and I'll do more plants next year.

i know this is an old thread but wanted you to know i made this today mary and it was delicious!! i loved it!! hubby aid he likes his sqaush a little more on the sweet side (this was a little too savory for him)...he added a little honey to his bowl and liked it better!! i tasted it and thought it was pretty good, too, so i might even add it to the recipe!?!

anyway, thnx for a great recipe!!

no, he just likes his squash sweet! i thought it was fine the way it was...he also likes his spaghetti sauce and sloppy joe meat (back when we used to eat  sloppy joes, that is) very sweet as well, he's weird!! hahaha

I just hit the mother-lode of butternut squash.  A friend found me a bushel (14 big ones) at the Farmers' Market for $12.00.  I'm so excited!!!  Pam

I'm getting ready to make this soup for a Bible study in my home this evening!! Yumm!! Can't wait to share with the ladies coming!!! It is delicious, if anyone is looking for a yummy soup.
