Cannellini Bean and Tuna Salad
Just open a couple of cans and toss with an herbed vinaigrette for this tasty take on tuna.
PREP TIME: 15 Min
TOTAL TIME: 15 Min
SERVINGS: 8
Dressing
1/4 cup olive oil
1/2 cup tarragon vinegar
2 tablespoons chopped fresh parsley
1 teaspoon sugar Omit or 1/2 tsp Stevia
1 teaspoon ground mustard
1 teaspoon dried thyme leaves
1/2 teaspoon dried oregano leaves
1/2 teaspoon garlic powder
1/2 teaspoon salt
Salad
4 cups Green Giant® frozen broccoli cuts
2 cans (19 oz each) cannellini beans, drained
2 cans (6 oz each) tuna in water, drained, flaked
1/2 cup shredded carrot
Lettuce, if desired
In small jar with tight-fitting lid, mix dressing ingredients. Cover; shake well.
Cook broccoli as directed on package until crisp-tender; rinse with cold water to cool.
In large bowl, mix broccoli, beans and tuna.
Add dressing; toss gently to coat.
Serve in lettuce-lined bowl. Sprinkle with carrot.

Oh my this sounds so yummy..will be trying....have a great day everyone..we are getting alot of rain here in Florida...but we needed the rain just not so much at one time....

Only difference for us is the canned broccoli.............can't get that here.............but we could use french beans?

Rain in Florida? Got soaked today again playing golf! At least in Florida you do get some sunshine. We are ever hopeful for the sun. Lovely green country and we can't have that without the rain.............Thank you God!

How about fresh broccoli instead of the frozen. It would have a better crunch anyway! Pam

Sounds like another great take-along lunch. I've never been crazy about classic tuna salad with mayo, but this sounds really good.
I think we got your rain today in the Pacific Northwest. I heard the first raindrops hit the skylight at about 6:30 this morning, and it hasn't really stopped all day. Wish we could spread it out a little to some of the areas that are parched! We are just not used to this humidity level on the days when it does warm up. It has been a weird spring.
