Thanks, Gwen...I've never been a poster child for anything before...How exciting!!  Gosh, I am still learning, but glad to share with others to help them make the decision to jump on the band wagon with us LDLers.  This is without a doubt, a true lifechanging ministry, I'll never say DIET again.

My weigh day is the last MONDAY of the month.  I can't wait!  It's a habit that's been hard for me to break...not weighing every week!  We're going to Wayne's mom's for Thanksgiving...and they throw a HUGE feast, everything imaginable...but I've already talked to myself, I'm NOT going off plan.  It's so not worth it!

Well, the Lord gives grace for every need and so far, the greater my need, the greater the blessings that are abounding to me.  This kind of undeserved favor makes me feel very humble.

Doreen, are you going to be able to take some LDL dishes to Wayne's mom's for Thanksgiving?  There are many dynamite recipes here if you are.  It's good that you're going to weigh the Monday BEFORE Thanksgiving!!  LOL

Hi Gwennie,
I am making the bean biscuts-danish  since I dont really care for the garbanzo beans I decided to try ro use white beans. I measured and turned the beans into flour in the vita mix. then continued on in the recipe. Well it was very dry to the point I needed to add more liquid. I put in 1/2 cup of soy milk then it was still to thick so then I added another egg and a cup of water. Then I could not get it smooth so I put it into the kitchen aide mixer and beat the heck out of it . Now I am going to try baking it. Ill let you know what happens.  Maybe need to start over,I just don't know.

LOL - Judie - I don't know what to tell you.  Sounds like one of my experiments!  It was funny the way you wrote it. I hope they turned out okay.  Thanks for sharing.  Do you really dislike the taste of the product when you use garbanzos, or do you just not buy them because you don't like them, therefore you didn't have them to use?  To me, white beans have a "beanier" flavor than garbanzos.  I honestly can't detect their flavor at all in the biscuits or muffins.  But then, I have a tendency to use so many aromatic herbs and spices that it would cover up any subtle flavors.  I like a BIG punch of flavor, even in my bread.

My one comfort food craving I had at the very beginning of Let's Do Lunch was for warm, gooey drippy salty garlic bread.  I wasn't consciously craving it -- but it actually woke me up from a sound sleep very early one morning.  As I was coming awake I involuntarily dreamed or imagined there was a piece of it right in front of my mouth.  I could see it, smell it, feel the warmth, hear the crispy crust lightly crunching between my fingers.  I'm certain if I had opened my mouth I would have been able to taste it, too.  But I was GOOD -- I ran into the kitchen as fast as I could & simmered some garlic in some diet margarine, mixed it into a can of hot butter beans - and FEASTED!  Having those in the pantry certainly saved me.  I ate those every day until I no longer craved garlic bread.  What does this story have to do with keeping canned garbanzos on hand?

Nothing!  But it amused me to remember it.

Vickie - It was sweet of you to think of us.  Stop in any time!  The day wasn't too bad.  I carried my lunch and spent the day at the hospital.  Getting pretty used to it by now.  They did a procedure that cleared a blockage cause by the tunnel catheter in his neck that was affecting circulation in his arm.  His poor arm had been swollen up like a Popeye arm since near the end of September.  Once they restored circulation it was almost back to normal size within an hour.  THANK GOD.  I sat at a table in the waiting room & ate my lunch, enjoying a good book.  First "ME" time I've had in a while!

Breakfast - 8 am
  • Handful of grapes while packing cooler

Lunch - Noonish
  • Black Grapes, Carrot Sticks, Cold Roasted Chicken Tenders
  • Popcorn, Iced Tea and about a thousand cups of black coffee.  It was much colder in the waiting room than the recovery area.  And the coffee was very good.

Dinner -- 7 pm with Neil, Michelle and Joe.  They ordered pizza and I felt a little sorry for myself when they forgot to order a salad for me, so I whipped up an Italian feast for myself in between tending the dialysis machine.
  • Big Antipasto style salad without the pepperoni:  Salad greens & raw veg, garbanzos, pepperoncini, low fat mozzarella, flat leaf Italian parsley, cherry tomatoes, & chopped up hot pickled gardeniera (sp?)
  • 2 Portobello Mushroom Caps marinated in Paul Newman Light Italian Dressing, broiled, then sprinkled with the topping scraped off one slice of pizza.  THERE ARE NO WORDS TO EXPERSS HOW DELICIOUS THIS WAS.  They were so good I ate both of them & couldn't finish my salad.  I'm going to cook the other two tomorrow.  I may send the kids to the store for some more mushrooms.  I'll eat the rest without the pizza toppings, unless I make it myself, LDL style.

The kids are home, Neil's healthy, and I'm tired and FULL!  Night Night.  My prayers are with you all.  Thank you for being there.

judie.....i'm really going to be curious about how your experiment comes out.....there's something special about garbanzos(although i love all my children equally....haha)..maybe you haven't given them a chance....it's almost the texture and taste of chestnuts...and i think that's what lends it the versatility for so many different types of foods.....hummus......muffins.......quiche crust....batter for oven fried chicken..............filler for meat balls............NOT to mention bean soups..................

gwen....i'm so glad everything went well..............you guys are always in my prayers......................niki

Hi ladies,
I guess I was telling fibs. I do use garbanzos  in hummus and a few soups. I just don't know maybe it was me but those garbanzo biscuts didn't taste good. I am going to try again using more spice. I do like a lot of spice.KRIS  came over yesterday and we got that bean cement to turn into a nice batter. Then we baked them Kris put some sugar free marmalade on some and fat free cream cheese on others . They were quite nice after all. But this morning I had one and it was really good.  I MUST HAVE BEEN NUTS YESTERDAY.
My daughters wheel chair was trying to catch fire yesterday. The control was not working right just flashing and would not move the chair. Katie put the charger on as she thought the battery was low. We went about our business and then smelled smoke. The controls was shooting sparks. Poor Molly was still in her chair. Well we got everything under control and Molly into bed .But can't get service for her chair at least before Monday. Then they will probably have to order parts. I guess molly will be spending time in bed. At least it is winter and doesn't need to go out.
I will let you know how my next batch of" cement biscuts "turn out.  Ha ha ha

Judie -  I'm glad your recipe turned out, but I'm so, so sorry you had trouble with Molly's chair.  Does she have a Jazzy?  Does she have a manual chair as a backup?

I'm seriously praying you have better and more timely service that I have.  It sounds ungrateful of me, because insurance paid for my power chair 100%, but I get so mad at those people to sold me the chair.  They got paid a HUGE amoung of money for it and they treat me like I'm the world's biggest pain in the neck whenever it needs service.

Sometimes that flashing display happens to my chair, too.  When it does, it's usually because:  1) I've accidentally hit more than one control at a time, or 2) the power connection to the battery has come loose.  Next time, try visually and manually inspecting the the cable (wiggling it) and all its connections, pushing all connections together firmly as you go, tracing the cable's path from the control all the way to the battery.  If you can get it turned off, it will usually be okay when you turn it back on.  I think its electronics just get confused.  It's very very scary when it happens, though.  You don't know what's happening and those lights flash so violently, it's kinda upsetting, isn't it?  I get especially nervous when it happens when I'm alone and away from home - without any way to get to safety!  WHEW!  I'm glad it doesn't happen often.

About the recipe - in an earlier post, it sounded like you were trying to make the beans into flour before adding the wet ingredients.  I just dump everything in together* so the wet keeps the mass moving until all is pureed. I have never had to add any liquid, although I do add a little more egg (or substitute) to the muffins because they usually have something liquid-y in them that needs the extra setting power, like applesaurce, pumpkin, bananas.  *except baking powder, raisins, oats & other stuff you would normall stir in afterward.  My double acting baking powder from the healthfood store is so powerful, it made the batter grow out of the processor when I put it in at the beginning.

P.S.  - Thanks sweet Niki.  You are in ours, too.

Re: Gwennaford's Journal

I didn't get Saturday & Sunday's food journaling done and now it's too late.  Flew right out of my head.  Everything was pretty standard, but I remember two things that stand out - one really good and one not so good:

Saturday all day was okay until Neil & friends came home from the gun show and brought me two pints of BBQ pulled pork and a fork from a little joint they found.  Instead of taking it to the kitchen & making a nice meal with the BBQ as a side, I sat where I was & scarfed up 2/3's of one container.  It was NOT make with lean pork and it wasn't even that tasty as it wasn't smoked.  It was just roasted with some vinegary sauce mixed in.  I was disappointed in myself and in the BBQ.  There were many other choices available that would have been much better for me, but I was lazy.

Sunday was great.  After church I made Teriyaki Salmon and a huge pile of Stir-Fry Chinese Vegetables for Joe (Michelle's BF) and myself.  Michelle and Neil raided the refrigerator for leftover pizza, BBQ and hush puppies because they didn't want salmon or vegetables.  I didn't feel one little bit guilty.  I made a nice meal and they chose to be human garbage disposals.  OH WELL!  :wrong:

Today's Food Journal - Mon. Nov. 17

Breakfast -- 7 am
  • PROTEIN ... mmm... GOOD ! (that was my Frankenstein imitation)  One scrambled egg, small piece of leftover salmon and two slices of smoked turkey breast heated in the egg skillet.
  • Big pile of grapes and coffee.

MIdmorning -- Popcorn and grapes and water.

Lunch  -- Skipped it.  Same out at 10 am to soak some beans, started cleaning & never got around to lunch.  I have the thing going on that is driving me crazy.  I call it the "BUT FIRST" ailment.  It goes like this:  I'm on my way to do somthing specific, something priority, and planned, and on the way, my brain says, "I'll do that, BUT FIRST ... "  then I go off an a tangent and never get to the priority thing.

Dinner -- Pinto beans I hot soaked this morning.  Maybe I'll have some of those yummy chinese stir-fry veggies, too.  I KNOW !  I'll cook them separately, then mix them together!

Loves to all...

Gwen,

I've been working on recipes for Thanksgiving that are all ldl for the whole family.  The dessert has puzzled me.  I've decided to make your bean muffins( the plain ones) and add a little vanilla and splenda to them and use them as shortcake and top them with blueberry sauce and or strawberry sauce and dab of low fat cool whip.

I wonder if I make the biscuit ones and add a fourth cup of corn and a couple of tablespoons of the steel cut corn meal if they would taste like corn bread.  I think that would be ldl.  I'm so glad to have those recipes.

Hope you are having a great day.

hi Gwennie,
Thanks for your advice. Her chair is fairly new. Im not sure if it is a jazzy but very similar base. the seating system is very custom made it elevates the seat lays out flat reclines and the backs lays back and seat is stationary. The joy stick is on the back so that i can drive as she cannot. So called the provider and they will be up to service chair. no she has no other chair as an extra as she outgrew her old one. Fortunatly her chair is in a good position for her so she can still sit there comfortably. I just cant move it around

Anyway after kris and I fooled around with the biscuts they came pretty good i have had them for breakfast.  I will make some more do better next time        Judie

Carrole - I recommend floating the shortcakes on top of the fruit at the very last minute.  They tend to dissolve when the get wet.  Your ideas sound wonderful.  I don't know about the steel cut corn meal.  I'm not up on the rules about that.  I did that biscuit topper with some frozen mixed fruit & a little cornstarch to make a cobbler that turned out ok.  Apples would be fantastic done the same way.  I'm going to bake pumpkin filling without the crust because I like it that way.  Probably call it pumpkin "custard" or something fancy.  Although there is a tart crust recipe on the board.

Judie -- Isn't there a handle or a lever at the bottom in the back that you can release the wheels so you can roll the chair?  On mine, it is between the rear wheels, about six or seven inches long and covered with black spongy-like material.  You grab it firmly & turn it downward a quarter turn like you would if your doorknob was a handle instead of a knob.  It's hard to turn.

Our insurance pays for a company, Custom Mobility, to make a new custom seat when the child outgrows the old one.
A very sweet man who goes to our church is the person that does the measurements, designs, draws the plans & manufactures the new custom seat.  I'm praying yours will pay, too.

Gwennie;

I have not yet made your biscuits.
BUT I ATE THEM! LOL
I dreamed that I was in a hurry to go to the family Thanksgiving Dinner and I just KNEW that I was going to eat the rolls that would be served so I whipped together your recipe and took a dozen biscuits. It only took about a minute and a half from start to finish.
And then I was just awful! They were SO GOOD that I refused to share any with my foster-family!
lol
I guess I'd better get busy and make my first batch soon so that by next week I'll be practiced enough to make a good batch that I can share. lol

Hi Gwennie , I knew about those levers thanks. yes it will be covered for payment as the chair is not a year old yet. Her chair has hi profile roho cushions on the seat and back makes it very comfy for her. She is 26 years old hopefully this chair will last a long time for her.We adopted Molly when she was 2. now she is a grown lady.
I am going to make some more biscuts today. I wonder what i will get?  ha ha ha

EnJae - How did they taste ?? *woot*  You are such a riot.  I don't blame you for not sharing - they have plenty of other stuff to eat, right?

Listen guys, -- if you're a baker and you have garbanzo bean flour on hand - then by all means, go for it.  I don't doubt that Vickie's recipe adaptation is great.  But I am SO NOT a baker.  I don't go anywhere they sell garbanzo bean flour and not sure I would buy some if I found it because ... you got it ... I don't bake!  I broil, roast and microwave.  That's it.  Oh, and crock pot.  Can't forget those beannies!

Please please please try the microwave biscuit recipe made with a can of rinsed, drained & paper towel dried off garbanzos or an equal volume of home cooked ones.  Cook the biscuits in the microwave in cupcake papers on top of paper towels.  I like to add a small handful of dried onion flakes and dried herbs to the batter to soak up some of the liquid.  And don't forget to set them on fresh paper towels while they cool.  This sounds terrible, but I let the the paper towels dry and save them for the next time.  It's just condensation, right?

You need to refrigerate leftovers in zip bags, because they are so moist they can spoil quickly.  When they are day-old they remind me of cornbread.
