Dinner in a pumpkin recipe?

Post by abbys mom »

Saw a delicious recipe for a Dinner in a pumpkin that uses ground beef, celery, onion etc.  But also includes rice and canned cream of chicken soup:<  These are both neither great for you or acceptable.  I don't want to post the recipe here as it would end up in a search and others might think it's acceptable or confusing.

But does anyone have a similar recipe for a dinner meal that is baked in a pumpkin?  Want to do something special for Halloween dinner.

Thanks to everyone for sharing what you might prepare or any ideas to make it acceptable.

Happy Halloween!

why not replace the rice with red or pinto beans.  You can make your own by adding 1 c. nonfat milk or  1c. butterbeans (pureed), 1 chicken bouillon cube(dissolved), 1/2c. chopped chicken breast, salt & pepper to taste, 1 sm sweet onion, 1 clove garlic.  Cook onion and garlic until soft and add all ingred. into pan and cook until boiling.

Also, I have a pumpkin and black bean soup recipe :

Pumpkin & Blackbean Soup

4 c. beef broth
1 lb. ex lean burger
1 tsp cumin
1 c. pumpkin
1 c. black beans
1 c. corn
1 onion
1 Tbs garlic
1 tsp italian seasoning

Bring to boil - simmer 15 min
Saute onion and garlic.  Add to broth

The pumkin black bean soup is yummy yummy  Sneaky Snoopy put me wise to it.  I made a veggie and beef soup the other day and add a can of pumkin to it and was so good.  Now is the time to stock up on pumpkin as after the holidaies the pumpkin is gone out of the stores.

L Mary, I can't get enough of the Butternut squash-roasted garlic soup.  I can even eat it for breakfast.  It is soooo delicious.  People have given me squash, so I'm grateful.  Country Girl and my DH do not like the soup.  It's about the only thing that CG doesn't like.  I'm going to make a double batch tomorrow.  It keeps well in frig and also freezes well.  I have a big pumpkin on the porch, so you say I can make soup with it?  If it stays good until after Thanksgiving, I'll do that.  I have it as part of my fall arrangement.  Libby's pumpkin can says it is squash.  I love the hot pumpkin smoothie.  Sooo many good recipes and foods on LDL--many from you.  THANKS,  :D JF

I have a question.  Was the pumpkin as sweet as the butternut squash?  I LURVE butternut squash roasted in the oven.  *SLURPS*
