This was my grandmother's recipe but it originally called for cornmeal which I have substituted the corn thins...For my uncle's version, see the next post...CQ
Ingredients:
1 pound chopped or thinly sliced okra
1/2 cup chopped onion
1/2 cup chopped tomato, seeds removed
Corn thins, crushed (6-8)*
1-2 eggs, beaten
1/2 teaspoon salt, or to taste
1/2 teaspoon curry powder, or to taste
1/4 teaspoon black pepper, or to taste
Oil for cooking
*More may be needed depending on the moisture of the mix
Directions:
Combine okra, onion and tomato in a large bowl. Add the corn thins, egg, salt, curry and pepper and blend together using your hands.
Heat oil in a cast iron skillet over medium-high heat. Form patties 2 1/2 inches in diameter, about 1/2 the size of a hamburger. Place the pattie in the pan and cook until golden brown, about three to five minutes. Flip with a spatula and cook until browned on the other side, about three to five minutes more. Remove and drain on paper towels.

Eliminate the chopped tomato and curry...
Add the following:
2 Tablespoons buttermilk (buttermilk is fat free)
2-3 Tablespoons of Parmesan cheese, grated (fat free or low fat)
2-3 Tablespoons of chopped fresh parley
Minced garlic to taste
