I got so busy this morning forgot about breakfast so ate a quick apple around noon.  This sounds like it will be our last nice day for awhile so we tried to get outside things done today.  Still didn't get the front lawn mowed but hopefully there will be a break in the rain as the week end nears.

Hi Wendy,

Your orange, pineapple, lemon smoothie sounds wonderful.  How do you make it?

Thanks,

I love sour so if you want sweeter then add whatever you use.
I freeze cans of pineapple in two ziploc bags and I take mandarin oranges and drain, rinse & freeze

Citrus Smoothie

1 bag pineapple -I thaw just a little to make it blend easier
1/2 bag mandarin oranges
2 heaping tbs. 100% orange concentrate - optional
Lemon juice - enough to thin
5 to 6 drops coconut flavoring - optional

Let me add that if I want icecream I substitute a frozen banana for the mandarin oranges.  I then fill up 4 coffee cups and put in freezer so I have icecream when ever I want it.  It just takes time to thaw a little bit before eating.

We took a day trip to St Regis and picked up my younger son today so we had to eat out for lunch.  It was a joke trying to eat LDL so it was good we grabbed shrimp from Costco on the way.  I ordered a burger with no bun and they didn't have anything I could eat with it so I took onion rings rather then fries.  The burger pattie was so thin and small that it was like a little piece of rubber with no taste.  The onion rings were fake ones so they were not worth eating.  These 2 small things on my plate cost me almost $7.00.

We are hoping he will be able to find a job so he can stay here all summer.  He & another boy have kept there apt. in Idaho so they will have a nice place by the college to go back to so they will have to pay  rent thru the summer.  If not he will have to go back to Coeur d'Alene and find work there since it is such a much larger area.  We pay his rent all thru the school year but for him to keep it we felt he needed to be responsible and work this summer and learn what it was like to have to pay rent and pay some bills.  He is such a good kid I think it will be a good life lesson.

Wendy, you are right by giving your son the opportunity to take responsibility for his rent.  I hope he finds a job.  I made a smoothie from  your recipe.  I used two  whole oranges, one whole lemon, one kewe, cup of ice and a T of water, and a little splenda.  It was so delicious-sweet tart.  Thanks for the idea.  It is hot here in the Ohio Valley---just beautiful weather.  The whole Memorial weekend is to be nice.  We have a big birthday party on Monday.  Both our babies were born in May.    I also had a hot bowl of soup---recipe from the board.     Joyful Friend

We have had sooo much rain I haven't been able to get our very large back yard mowed.  Today was cloudy but not raining so at 10 am I started with our riding lawn mower.  I got almost half done and the belt broke that makes the blades turn.  I called a friend and he came and after an hour had me back on track.  With the lawn being so long I had to mow and let the grass dry then pick it up.  It still kept clogging the pipe and I took that thing apart about 20 times.  It looked like a hay field on the first good cutting, I was thinking it would have been easier to have baled it.  When I was all done I had 11 of the largest garbage bags full of damp grass.  I finally finished after 8 pm tonight with only one quick break to eat a bowl of soup while the mower was being fixed.
Good think is the Lord held off the rain until I was done and now it is pouring rain and is supposed to be like this all week end.

I am leaving Friday for Coeurd'Alene for my future daughter in laws shower.  They are providing all the food for the meal so I will have to see what I can eat while there.  I am thinking I will eat ahead of time so I will not be at all hungry.

B:  Bowl of Rasperries
Coffee Cup of LDL Ice Cream
L:  White Great Northern Bean Soup
D:  3 Hebrew National Hotdogs fried w/ mustard
    Watermelon

Those hot dogs smelled so good cooking I just didn't resist very hard.  Mike was tired from working all day and he went to the store and bought him macaroni salad and hotdogs.  So by the time I came in I was starved and settled for the hotdogs but resisted the salad

Ok I made the strawberry pie again today and it turned out wonderful.  I used a thin layer of whip cream on the bottom as the crust and piled the strawberries on top in a pie pan.

STRAWBERRY PIE

1/3 C. cold water in a medium sized dish
1 C. SF type sugar
1 Pkg Knox unflavored gelatin
1/3 C. Boiling water
6 C. strawberries, cut in half or sliced

1.  Pour 1/3 cup water in a small mixing bowl.  Add SF sugar.  Stir well.  Sprinkle gelatin over the top.  Let stand 1 minute.
2.  Pour 1/3 cup water in a small pan.  Boil.  Pour boiling water over gelatin mixture.  Stir until dissolved.
3.  Refrigerate approximately 20 minutes or until the mixture begins to thicken.  Stir frequently.
4.  Toss with prepared berries and spoon into pie crust.  Chill until set.
Serve with Whip Cream

Still in Idaho and trying to eat LDL but since I am in the hands of relatives I am eating what they serve.  I didn't eat anything at the wedding shower so I was happy about that.  I asked about the Mexican casserole and was told it was made with beans and pretty much everything I could have except tortilla shells.  After I ate more then half I saw a noodle in it that hadn't been mentioned.

B:  Orange, Pineapple & Lime Smoothie
L:  Mexican Casserole
    Super 1 Crispy Chicken
    Watermelon
D:  Super 1 Crispy Chicken
    Watermelon
Green Salad w/ Zesty Italian Dressing
    Cherries
