Re: Wendysgoodnews 1st day to Weight Loss
We had a big lunch today so tried old and new recipes. I tried the Blue Cheese Coleslaw recipe and it was really delicious (who would have know grapes would taste good with cabbage), would even be good without bluecheese for those who don't like it. The dressing was so tasty it would also be good for a veggie dip.
When I first started on LDL I found a recipe called Lemon Zest Whole Chicken so I made that and everyone loved it. The gravy from the drippings put thru the blender is so good over LDL mashed potatoes. I also decided to try to make fried zucchini with popcorn flour. It was so delicious with just a bit of salt and pepper my husband liked it better then the way I used to make it.
B: Lemonaid smoothie - yummy
L: Lemon Zest Chicken breast
LDL Mashed potatoes w/ garlic chicken gravy
Blue Cheese Coleslaw
Fried Zucchini
D: Cherry,Raspberry & Huckleberry LDL Pie over sf vanilla pudding for our dessert

Re: Wendysgoodnews 1st day to Weight Loss
Well, huckleberries have a taste all their own. They look more like bosenberries then blue berries but not the same in taste. They have a very strong flavor and even mixed with the other two berries their taste comes thru. If you ever get a chance to taste them you will love them. They are picked in the mountains all around us so this time of year are plentiful. The bears love them as much as we do so when picking them we have to watch for bears to join in the picking.
I am so thrilled when I make a meal like this and everyone is shocked that it is considered healthy "diet" food. I wish I could convince my family to try it. They all think it is too much work and they are not willing to give up their favorite foods.
* I put up 3 of the wedding pictures of my family. I was kinda disappointed when I saw the pictures tonight since in my mind and when I look in the mirror I feel much thinner then I look in the pictures.

Re: Wendysgoodnews 1st day to Weight Loss
Thanks Cameron I decided today after looking at all the pictures again that I have to keep reminding myself if I hadn't lost all this weight before the wedding I would have really hated being in any of the photos.

Wendy,
You family wedding pictures are beautiful. Loved your dress -- blue is certainly your color and you looked fabulous. Your sons are some good looking young men and your new daughter-in-law is lovely. Of course, I can't overlook your handsome husband. What a great family!

Re: Wendysgoodnews 1st day to Weight Loss
I used a Walmart brand lemon drink mix that was in a little tub. I added a few tablespoons of lemon juice because I love sour and it is delicious.
sf vanilla pudding is one of those very seldom items because of the skim milk plus it can cause cravings to return. I use it every once in awhile and have not had any problem with gaining weight though.
Lemon Pie
1 individual tub of crystal light
4 Tbs corn starch
3 C. cold water
2 egg yolks
Mix cornstarch and crystal light together. Add 1 cup water slowly while stirring until dissolved
Add 2 cups water to mixture in pan. Stir continually on med heat until mixture boils. Take (in small bowl) 2 slightly beaten
egg yolks and add enough hot liquid to eggs until they are warm. Slowly pour eggs into lemon mixture while stirring.
Boil 1 minute. Put in dish and refrigerate until cool and thick.
Meringue can be added to top. Put into custard cups and bake.

Re: Wendysgoodnews 1st day to Weight Loss
Wendy,
Lemon Meringue Pie is my all-time favorite. I made the one that is already on the boards and didn't have great success with it -- too much work and really a thin, thin pie. I am going to try your recipe; it is not only easier but putting it into custard cups will allow me to make my pie as thick as I want. Also, because I am at goal weight I will still make this dessert every couple of months or so. Thanks for another great idea!

Re: Wendysgoodnews 1st day to Weight Loss
I love this pie it is so easy and it gets as thick like a thick pudding. I tried the other lemon pie also and it was too much work and it did not turn out good. I was trying to find a good lemon pie recipe that would taste good and I couldn't find what I was looking for. I did get the idea of using the tub of lemon flavoring from another recipe then made up the rest myself from how I used to make lemon pie.
